A few years ago I asked myself a question. If I only had $30 to spend… how could I grow a garden that meaningfully improves food security? Not a hobby garden. A garden that actually feeds a family. These are the crops I chose. Jerusalem artichokes — perennial calories that multiply every year. Garlic — one bulb becomes four to eight. Pole beans — fresh eating in summer, dried beans for winter. Perpetual spinach — cut and come again greens that tolerate cold. Parsnips — dense nutrition that sweetens after frost. Tomatoes — fresh eating plus a pantry of sauces and preserves. Squash — summer food and winter storage. Cucumbers — fresh eating and fermented pickles. Red Sails lettuce — heat tolerant and slow to bolt. With these ten crops I have: Fresh food all summer. Storage food for winter. And most importantly… Seeds for next year. Because real food security doesn’t start with land, tools, or money. It starts with learning how to grow something from almost nothing. Look up a seed exchange or Seedy Saturday in your area this spring. You might be surprised how many seeds can be shared, traded, or given freely. It’s never about how many resources you have. It’s about how resourceful you’re willing to be. We are facing a global food crisis in a few months and it’s not front page news. However, the issues stacking against production agriculture are setting us up to have now to have no food come harvest. Here is a list of issues that have arisen just this week: • Gas prices have risen 30% (that means food prices will raise about the same) • China has told exporters to stop shipping fertilizers like urea, nitrogen, potassium, and NPK overseas (30% of the world’s urea comes from China) • The Middle East cut off another 25% of the world’s fertilizer (this is now 50% of the fertilizer farmers need for spring planting) • A beef slaughter plant processing 5000 head a day shut down and now 800k acres of Nebraska grass land has burned (our food funnel is empty) We need to make big changes toward sustainable agriculture to stop our need for manufactured, imported resources. But that won’t happen overnight. I don’t think the shelves will be empty this fall (but they could be). However, if I paid $3 for a head of lettuce at Walmart today, how how much could I be paying when there are half as many heads available and it costs twice as much to get it to me? If you’re feeling a little uneasy about all of this, you aren’t alone. You can low key be prepared without breaking the back or freaking out your neighbors though. 3️⃣ Ways to intentionally be prepared for a food shortage 🥩Secure a protein source now (our protein eats the things that need fertilizer) - put a deposit on a half beef, buy chickens, or get on a milk share. 🥦 Start a garden and plan/learn a way to preserve any excess. You’d be shocked how far that can stretch. 🫘 But a little extra every chance you get. This means getting the staples like salt, flour, beans, or rice in bulk. Then everyone you find something shelf-stable or freezer friendly on sale, buy two! Potatoes, squash, tomatoes, and beans give you the most food for your space. Learn basic food storage. Start with: Freezing Drying (herbs, seeds) Simple preserving (tomato sauces, chutneys) Build a dry food backup. Stock up slowly on rice, lentils, oats, chickpeas, flour. Store food properly. Initiative Petition 28 (IP28) would remove long-standing exemptions in the state’s animal cruelty laws — protections that currently allow hunting, fishing, wildlife management, and regular food production. If those exemptions disappear, harvesting deer or salmon to feed your family could become illegal. Raising chickens, hogs, or beef cattle on a normal farm could face criminal liability. Even standard breeding practices could be challenged. And here’s what should concern every conservationist:Wildlife agencies are primarily funded by hunters and anglers. If hunting and fishing go away, so does the funding for habitat restoration, species recovery, invasive species control, and public-land management. Supporters have already submitted over 100,000 signatures. They need 117,173 valid signatures by July 2 to qualify for the November 2026 ballot. This isn’t just about sport. It’s about food security. Because we’ve simplified our garden and animals, we’ve learned to do each individual task really well. And as a result, we’re slowly able to add more things in as the years go by. Now that we’ve simplified, I can truly say that we love this life.
