I FIXED THE DUBAI CHEWY COOKIE Instead of struggling with the marshmallow like half the internet, I decided to make the outside with mochi and it was a 10 (even though this isn’t actually a cookie 😅) Makes 8-12 INGREDIENTS 1/2 package of frozen kataifi shredded dough (approx. 200 g) 1/4 cup butter 1/2 cup pistachio cream Mochi STEPS 1. Melt some butter in a pan on medium heat. 2. Thinly chop some kataifi. 3. Add the kataifi to the pan with butter and cook until golden brown. Be sure to stir consistently so it doesn’t burn. 4. Once done, set it aside to cool. 5. Add the brown kataifi to a bowl with pistachio cream and mix until everything is fully combined. 6. Make your favourite mochi recipe (I used the one from Modern Asian Baking at Home). 7. Add 1 tbsp of the kataifi mixture to your mochi. Wrap the mochi around the kataifi and make sure the seam is tightly closed. If you want them to be bigger, just aadd 2 tbsp of the mixture instead. 8. Welcome to episode 11 of making ridiculous food trends, where we’re making “candy straws.” The verdict: strawberries rolled in sugar are delicious. No one’s debating that. Using rice paper for things like spring rolls is delicious. But strawberries rolled in rice paper and sugar? Yeah that didn’t do it for me. Plus, it tasted nothing like a candy straw. You’re allowed to eat a real candy straw. This version just takes it too far. It’s super time consuming, super chewy and not sugar good 🤷🏻‍♀️ I re-named the series because these trends are definitely ridiculous and calling them “healthy” was misleading IMO 🙃
