It’s #FoodWasteActionWeek and I’m celebrating by sharing some of my best food waste avoidance tips, according to you lot! So…Is this a regular sight in your fridge? A half open packet of feta? So much feta gets wasted. Next time, when you open a packet – before you even open it - do this. Put some sea salt into a jug (I started with 15g of sea salt) and then top it up with 10x that amount of boiled water (so 150g in this case). Stir it so the salt dissolves and then just leave it to get totally cold. When it’s cold, pour it into a small jar. Then you can open your feta, use it for however you want to use it and then rather than sticking the pack back into the fridge, you put anything that’s leftover inside the brine. As long as it stays underneath the surface of that brine, with a lid on, in the fridge, it will keep for so much longer than you would think. Definitely a few days, I’ve had it in there for weeks in the past. This is one of my most viral tips, with millions and millions of views, thousands of shares and saves. I’m very happy when I think about how much feta has been saved since I first shared this tip!

Did you know you can freeze your greens? 🥬 Yep. If you’ve ever found yourself lamenting slimy spinach at the bottom of a bag that you haven’t managed to get through, this one’s for you. Wash your greens, pop them back in their bag, roll it up and pop it in the freezer. You can add them to stews, curries and soups straight by the handful, as needed. No need for fiddly blanching, squeezing and portioning. They should keep for a good few months. #foodwasteactionweek #kitchentips

Did you know that 8.2 million shopping baskets worth of food goes to waste every year (in the UK)? As ambassador to @lfhw_uk I’m taking part in Food Waste Action Week and doing my bit to reduce food waste whenever and wherever! We recommending the UK government impose a packaging ban on 21 fruits and veg! If this ban was implemented today, it would mean that 100,000 tonnes of food could be saved from landfill. Sound good? We spent the day cooking donated surplus food from @thefelixproject at @refettoriofelixlondon for around 150 people - thanks so much for the donation and allowing us to cook in your space 💚 On the menu, we had spiced carrot and potato fritters with mango chutney, creamy broccoli stem pesto pasta with roasted broccoli florets and a carrot cake with cream. One breakfast, 15 food saving tips, to kick off #FoodWasteActionWeek 1. Store things properly. Air is often the enemy! I bought this bagel home in a paper bag and immediately sealed inside a reusable bag too, to keep the air out. 2. Plan meals around what needs to be used up. This whole breakfast happened because I had open cream cheese I wanted to finish. 3. You can grate horseradish root straight from frozen, just like ginger. 4. Keep tiny bits of leftover vegetables in lidded containers, so they don’t get lost and dry out in the fridge. 5. Don’t throw out the pickle juice! There’s lots of uses for it. 6. Pickles and preserved ingredients, whether homemade or shop bought, are an age old method of not wasting fresh ingredients. 7. Keep a jar of pink pickled onions on the go in the fridge and you can add to it if you have any onion left on the chopping board. 8. Keep herbs like dill in a vase of water, like flowers. They love it! And keep them nearby so you remember to use them. 9. Freeze excess smoked fish ( I bought this last year when it was on offer) and it defrosts really well (I do it in the fridge overnight). 10. You can’t refreeze it once defrosted, but keep it well wrapped and move it to the fridge and use within 24 hours 11. Blended things, like this schmear, or pates, smoothies, soups etc, are great final resting place for all sorts of bits and pieces. 12. Be wary of serving size - you can always serve yourself more, but once food is on your plate and mixed with other things, it’s harder to use up leftovers. 13. If you just need a little squeeze of lemon, put the semi-used halves in a sealed jar. I have come back to this one wedge 3 times now, no need to cut into a fresh lemon. 14. You eat with your eyes first, so don’t just chuck leftovers on a plate, remember to think about presentation and garnishing. 15. And finally, eat mindfully, and with gratitude. Treat food and all the people along the chain...that grew it, baked it, transported it, sold it... with respect. It's #FoodWasteActionWeek and these rice paper pancakes are such a delicious way of using up veg that's on its way compost-wards. Simply shred it down, mix it with fresh ginger, garlic and some seeds and herbs, then fry it between two sheets of soaked rice paper before dunking it in the simple dipping sauce. It's somewhere between a crispy dumpling and a pancake, and we're completely obsessed. Don't feel like you have to stick rigidly to our recipe - shred whatever you've got lying around and use it up, in the tastiest way possible. Serves 2 You'll need: ½ a red onion or 2 spring onions, finely sliced 1 carrot, coarsely grated ½ a courgette, coarsely grated handful of finely shredded pointed cabbage, spring greens or kale 2 sweet peppers or ½ a standard pepper, thinly sliced 2cm of fresh ginger, finely grated 1 garlic clove, finely chopped small handful of chopped coriander small handful of chopped mint 1 tbsp sesame seeds ½ tbsp chilli crisp oil or sriracha sauce soy sauce or tamari, to taste and to serve 4 rice paper (spring roll) wraps Place the veg in a mixing bowl along with the ginger, garlic and chopped herbs. Add the sesame seeds, chilli, and ½ tablespoon of soy sauce. Mix thoroughly. Get a wide shallow bowl of warm water ready for your rice paper. Add a dash of oil to a frying pan and pop it onto a medium/high heat. Soak a sheet of rice paper in the warm water for 10 seconds or so until just starting to become pliable. Transfer it to the frying pan and quickly top it with half the veg mix. Fry for 3-4 minutes until the bottom is looking golden and crisp and is easily freed from the pan. Soak a second rice sheet and pop it on top. Use a spatula to gently flip the pancake over so that the fresh rice paper cooks and crisps too – another 3-4 minutes. Slide onto a chopping board and crosscut it into bitesize squares. Eat immediately with some soy or a dipping sauce of your choosing on the side. Repeat to make a second pancake, then wish you’d made more...

Gnocchi with Low-waste Pesto & Golden Breadcrumbs (recipe below) ad This week is #FoodWasteActionWeek! I’ve partnered with @lfhw_uk to share a low waste recipe with you guys, using three main ingredients: Leafy greens, Potatoes, and Bread! A lot of the food we throw away in the UK is edible, so this recipe includes three ways to make it delicious 😋 🥬 93,000 tonnes of lettuce and leafy salads (including spinach) are wasted each year in UK homes. We can stop this by blanching, whizzing them into pesto with loads of lemon and garlic, and freezing them into ice cube moulds. You’ll only use what you need and will have a delicious emergency pesto sauce for traybakes, pasta sauces and more, on those days when you just can’t be bothered! 🥔 199,000 tonnes of potatoes are wasted due to personal preference - driven by potato skins and peelings being discarded - a really easy way of reducing food waste is to stop peeling them! All they need is a quick scrub, and you can mash them with the skins for gnocchi too, like I’ve done here. Extra gnocchi dough can be frozen! 🍞 960 tonnes of bread are wasted every day in the UK, which is roughly the equivalent of 24 million slices daily. Stale bread can be whizzed into breadcrumbs, add salt and fry until crispy and golden - can be used to add crunch and texture to salads, soups and more! Why is it important? 🌍💰 Food waste isn’t just a waste issue - it’s a climate problem. When food is thrown, it’s not just the food itself - it’s the water, energy and land it took to grow it, not to mention the money you’ve wasted (each household wastes up to £1,000 a year throwing away edible food!) 🌍💔 Additionally, when that food ends up in landfill, it breaks down and releases a greenhouse gas called methane (which traps more heat in the Earth’s atmosphere than CO2). The @UNEP estimates methane is responsible for about a third of the warming the planet is experiencing today - so reducing it is a great way to slow global warming AND save our money.
