Well THAT was a lot of cooking! 🥲🌱 Can you tell that I ran out of steam towards the end there? SUCH detail for the fritters, such LITTLE detail for the aubergine! 😅 I’m not sure I actually ended up covering everything I foraged and cooked, but I did my best and that’s all we can hope for I think 🌻✨ If there’s anything you want to see more of, let me know and I’ll see about making a recipe video for it! 🙌 I guess for now, I’ll share the recipe for the fritters! 💚 These fritters are good and I was very pleased how well they went down at the workshop! ✨ One lovely lady even asked to take a few home so her chef husband could try them! Spring Wild Herb Fritter Recipe: (Makes roughly 12 fritters - my recipe is based on ‘Iranian herb fritters with barberry dipping sauce’ from Ottolenghi!) Ingredients: Dip - ¼ cup magnolia syrup 1 TBSP soy sauce 35ml lime juice (roughly one large lime) 1 sliced red chilli Fine sea salt Fritters - 120g mixed fresh herbs (I used cow parley, wild garlic, ground ivy and ground elder, but you could use anything you have) 90g onion grass or spring onions 1.5 tsp ground cumin 1 TBSP nigella seed 50g panko breadcrumbs 25g pecans or walnuts chopped 8 large eggs Oil for frying Fine sea salt Method: 🌼 First, I made the dipping sauce by mixing all the ingredients together. 🌻 Next, for the fritters, chop all the herbs finely, place them in a large bowl with all the ingredients (apart from the oil for frying) and stir to combine. Add salt to taste (roughly ½ tsp) 🌾 Put 2 TBSP oil into a large frying pan on medium-high heat. Once the oil is hot, add around 1.5 TBSP of batter into the frying pan to make a fritter. Fry for around 2 minutes on each side (or until golden brown) 🌷Do 3-4 at a time and add a little more oil to the pan each time. Transfer onto a plate lined with kitchen towel. È ampiamente utilizzato per riequilibrare i livelli ormonali, in particolare per la presenza naturale di testosterone. Con il suo aroma dolce e balsamico si può aggiungere a frullati, yogurt e molto altro, io ad esempio lo aggiungo al budino di semi di chia. Questa polvere viene prodotta dai microsporofilli (fiori maschi) in primavera, con il vento andrà poi a fecondare i macrosporofilli (fiori femminili, stròbili o giovani pigne). Raccolgo i fiori quando sono carichi di polline, li separo dagli aghi e li setaccio. Lascio gli scarti ad essiccare e li setaccio una seconda volta poiché continueranno a rilasciare ancora del polline. Gli aghi invece li essicco e polverizzo, utilizzandoli per aromatizzare prodotti da forno. Qui ho raccolto da alberi di pino d'Aleppo. #pinushalepensis #pinepollen #foraging

Have you seen this plant lately? 🌿 Hedge garlic or Garlic mustard is milder than wild garlic, but has a distinct oniony mustardy aftertaste that’s real pleasant added into salads or sandwiches, bulking out a pesto, for DIY mustards and wasabi pastes - and older leaves can be cooked like cabbage greens. The leaves can become bitter after flowering, but most bitterness is down to how much sunlight and heat the plants are getting, so I always choose a shady spot to harvest from. Chewing fresh leaves is said to treat sore gums and mouth ulcers, and a poultice rubbed on the feet is thought to cure cramps! Jack by the hedge is another common name for Alliaria petiolata - as ‘Jack’ and ‘Jill’ are often names given to common plants… and you can very often find it alongside or beneath hedgerows. This is a good plant to know if you haven’t got any wild garlic hotspots near you as this plant is not so picky with where it grows and is often found in woods, fields, parks, alleyways and verges and can be found from late January through autumn. Hedge garlic is native to the UK but has allelopathic qualities and can inhibit germination and stunt the growth of nearby plants, so I like to keep this plant contained to the back of my garden and harvest any strays that find their way into my veggie beds. Lilac Syrup 5 days later… this one surprised me really a lot! Raw lilac syrup (small batch): 30 g fresh lilac blossoms (only petals, no stems) 120g sugar juice of 1 lemon (aprox. 50g) Layer the lilac blossoms with sugar, add lemon juice, and press gently until everything starts releasing juice. Seal and leave to macerate for 4-7 days at room temperature, away from direct sun. Stir or shake occasionally if you can. When the sugar fully dissolves and the color turns soft golden-pink, it’s ready. Strain well and bottle. Store in the fridge. Tips: If the sugar doesn’t dissolve easily, add a small splash of water and keep it at room temperature. Or gently heat it up. Too cold slows everything down. It’s also good to let lilac flowers wilt for a short time after picking, so insects naturally leave them before processing. Floral, light, and unexpected. A small taste of late spring in every glass. Only use flowers you are 100% sure are safe and untreated. And please, be gentle with nature- take only what you truly need ❤️ #lilacsyrup #homemade #foraging #springrecipes #simpleliving

Raw violet syrup (30 g flowers): 30 g fresh violet flowers 300 g sugar juice of 1 lemon Layer the flowers with sugar, add lemon juice, press gently, and leave sealed for 3–14 days (no heat, not too cold). Once the sugar dissolves and the syrup turns a violet-pink color, it’s ready. Strain through a sieve and store in a bottle in the fridge. Tips: If it takes longer to macerate, it’s usually because of too much sugar or a colder place. That happened to me — I added a little water to help dissolve the sugar. Room temperature speeds things up. Ice, syrup and water… Spring in a glass. Take only what you truly need, so we can be as gentle with nature as it is with us.
