This is Komboucha’s cousin & does the same job. It’s a lot easier to make & once you make the bug, you can use it for your sodas. 1 tbsp Sugar / Jaggery 1 tbsp Grated Ginger 1 cup Warm Water Keep adding 1 tbsp Jaggery + 1 Ginger everyday for about 5 to 6 days until the solution is frothy & smells fermented. 🌟 Vishesh Tippani - Clean the Glass Jar with HOT water to sterilize it. - The water that you will use needs to be boiled & cooled. By @wendythefoodscientist Through wild fermentation, using just raw ginger, sugar, and water, you can create your own probiotic soda at home. On the skin of ginger live wild yeasts and lactic acid bacteria. Feed them sugar, and the magic begins: ✨ Yeasts turn sugar into carbon dioxide and a little ethanol ✨ Lactic acid bacteria create lactic acid for tang and preservation Seal it in a bottle to trap the carbon dioxide and you’ve got real, naturally carbonated soda. My favorite flavours: 1. just ginger 2. black currants to make cassis (from my garden) 3. red currants (from my garden) 4. cranberry 5. green tea How start a ginger bug? A ginger bug is like a sourdough starter. You need to feed it to keep it alive. Ginger bug starter 🍹✨ Ingredients: 350 ml clean water 1 tbsp unpeeled fresh ginger, chopped (important: must be organic!) 1 tbsp cane sugar Method: Chop the unpeeled ginger into small pieces (don’t peel, because the skin has wild yeasts!). Add the water, ginger, and sugar to a clean glass jar. Stir vigorously to dissolve the sugar and introduce oxygen. Cover loosely with a cloth or lid and keep at room temperature. Every 24 hours, feed with 1 tbsp chopped ginger and 1 tbsp sugar. Stir well. I’ve made my first ever ginger bug soda. This is part of my goal to eat (and drink) as healthily as I can. I’m trying to add lots of fermented foods into my diet. I used rhubarb juice from some of my own forced rhubarb, and a ginger bug that I only started making a week ago. A little bit of sourdough starter might have accidentally fallen into the mix too 😉 After only three days in the bottle it’s fair to say it’s quite a lively little number 🤣 I’m so happy with the result I’ve already made more. Not my normal garden content but I thought you’d like to see it all popping off. Mango Ginger Fermented Soda Gut-friendly, naturally fizzy, and made with real ingredients. If you’ve been curious about fermentation, this is one of the easiest places to start. The ginger bug recipe can be found on my page. Ingredients: 1 cup ripe mango (fresh or thawed frozen) 4 cups filtered water 1 tbsp fresh grated ginger 2–4 tbsp natural sweetener (raw honey or maple syrup) ¼ cup fresh ginger bug liquid (strained) Instructions: Blend mango with 1 cup of water and ginger until smooth. Strain using a cheese cloth. Pour into pressure safe swing top bottles and add remaining water sweetener and, ginger bug liquid. Rotate the bottle back and forth to ensure everything is evenly mixed. Ensure 1 inch of head space is left at the top. Seal the bottle and place on the counter to ferment for 2-3 days or until it becomes fizzy. Burp bottles daily to avoid too much pressure. Place in the fridge once it has finished fermenting. Save this for later and follow along for more fermentation recipes in my series. Disclaimer: this is a traditional homemade fermented beverage. Fermentation times and results may vary. Use clean equipment and proper food handling practices. A small amount of alcohol can be formed during fermentation. This is the third time I've made the rose and strawberry soda combo and it is a winner for sure! The addition of rose hips adds vitamin c and antioxidants and did not alter the flavor, it was wonderful! Strawberry rose soda Makes 3 16 oz bottles If you are used to making my ginger bug sodas, sAme procedure, we essentially have a rose tea, 1 cup of strawberries and it should ferment relatively quickly because of the fresh fruit. 1. Brew a concentrated rose tea, I did 1/3 cup of rose petals, and 1/3 cup of rose hips. Let steep for at least a half and hour, the longer the better. 2. While its still warm dissolve 1/2 cup of raw sugar to your tea, stir to dissolve. 3. Pour your tea into a half gallon mason jar. 4. Add 1 cup of diced strawberries. I used frozen that I let thaw for a few hours. You can honestly use fruit of your choice here, and adjust increment as you please. 5. Now dilute your drink with filtered (not tap) water up to where the glass starts to curve. (You can see im video my jar and after adding 1/2 ginger bug to this its almost full). 6. Strain 1/2 cup of your ginger bug liquid. Add to your sweet tea mixture (as long as its room temp, cant be hot). Mix. 7. Add a loose lid, cheese cloth, etc. And let sit on the counter until its nice and bubbly. Once i have a nice stream of bubbles and my soda tastes good, STRAIN the solids from your drink. 8. Second stage of fermentation, your drink is ready it just needs to have its carbonation trapped so its nice and bubbly. The safest way to do this is to use a 2 liter plastic bottle, you can also use regular mason jars and lids, i use swing top bottles. Be aware of the risks before proceeding (before starting this journey i watched an hour of tutorials on YouTube on fermentation). This stage is highly variable but you saw your bubbles rolling and fermentation going, so from here it should only need a few hours, 6-12 tops to carbonate. You can burp periodically. REFRIDGERATE before opening. Transfer to fridge and let cool before drinking. Are you going to try this soda? Once it’s ready, strain about 1 cup of the ginger bug liquid, refeed the bug, and refrigerate it. Pour equal amounts of this strained liquid into two flip-top bottles. First juice about 4 cups of grapes 🍇 (any kind you like!). Strain the juice and divide it into the flip-top bottles, finish the bottles off with filtered water. (Just up to the neck of the bottles) Gently shake the bottles to combine everything, then set them aside in a warm and dark place to ferment. 🫧 Check daily to avoid over-fermentation. P.S. If it doesn’t seem to be fermenting, add a little sugar (any sugar alternative works but not monkfruit or stevia, since the bacteria needs real sugar to feed on).
