Last year we were at a Korean restaurant and I ordered Japchae FOR ME, and my kids ate it all. That’s when I started making it at home. 😁 Ingredients: Beef and beef marinade: -1.2 pounds beef short ribs or rib eye, sliced thinly - 3 tbsp. soy sauce - 1 tbsp. brown sugar - 1 tbsp. sesame oil - 1 tbsp. rice wine vinegar Noodles Marinade: - 300 grams sweet potato noodles - 1/4 cup soy sauce - 1 tbsp. brown sugar - 1 1/2 tbsp. sesame oil - 2 garlic cloves, minced - 1.5 tbsp. gochuchang Noodles and Veggies: - 1 onion, sliced - 8 ounces shiitake mushrooms , stems removed and sliced - 2 cups baby spinach - 1/2 a carrot, sliced thinly - 1/2 a red bell pepper, sliced thinly - 2 stems of green onion, sliced (separate the white and green part) - Salt and pepper to taste - 2 tbsp. sesame seeds, plus more for garnish Directions: 1. Add sliced beef into a bowl with all of the marinade ingredients. Mix and set aside. 2. In a very large mixing bowl, mix together the noodle marinade ingredients. Boil the noodles according to package instructions. And then put in bowl, on top of noodle marinade. Do NOT mix. 3. In two tablespoons of oil, sauté the onion, white parts of the green onion, shiitake mushrooms together on high heat until softened (2-3 minutes). Add salt to taste. (I did about 1/2 teaspoon) Then add the mushrooms and onion on top of the noodles. Do NOT mix yet. 4. Add another two tablespoons of oil to the same pan and add in the carrots and bell peppers. Cook for 2-3 minutes and then add in the spinach and green parts of the green onion. Cook for another 1-2 minutes until the spinach is wilted and add salt to taste. Once done, put it into the noodle bowl. Do NOT mix yet. 5. Cook the beef on high heat in two tablespoons of oil until it just turns golden. (About 3-4 minutes). Transfer the beef to the noodle bowl. Add in the sesame seeds to the bowl AND FINALLY MIX! 6. Taste to see if you’d like to add more salt. Plate and garnish with more sesame seeds and green onion. Enjoy!

Season the beef with soy sauce, sugar, sesame oil, and black pepper. Stir-fry quickly over high heat and set aside. 3. Stir-fry onion, carrot, and mushrooms separately. Blanch the spinach and squeeze out excess water. (I just stir fried the spinach too) 4. Add noodles, beef, and vegetables into a large bowl. Season with soy sauce and sesame oil. 5. There a bunch of tricks to making yummy japchae: My mom told me you need to aerate the noodles while cooking them, and even add a bit of cold water to the boiling water here and there to keep them chewy. You definitely need to saute the veggies one by one instead of together. This way you can truly taste all the different flavors. I also like to “filet” my bell peppers so they are really like “matchsticks.” I don’t like it when the peppers are too thick—it tastes and looks clunky and japchae is meant to be served in royal palaces. I don’t like to cook my noodles in the sauce as that will result in soggy overcooked noodles. The magic to japchae is keeping those noodles bouncy. Another trick I like to use is adding a bit of the water the noodles were cooked in to the sauce before stirring vigorously to achieve that lovely emulsification. Also, use good sesame oil, since it is the primary flavor of the sauce. If you can, try and get some from a Korean grocery store. Sesame oil is like extra virgin olive oil. This might be the easiest japchae I’ve ever made. As you know, my mom was visiting a few weeks ago, and while she was here she taught me this super easy spicy japchae recipe. Of course I had to share it with you all 🫡 It’s honestly so simple. Everything goes into one pan. When you cover it and let it cook, the moisture from the bean sprouts naturally steams the noodles and softens them perfectly. No separate boiling, no complicated steps. My mom’s little tip was to save half of the sauce and add it at the end when you sauté everything together. It makes the flavor bolder and gives it a stronger, spicier kick instead of tasting diluted. It’s chewy, spicy, a little savory-sweet, and so satisfying. If you love glass noodles and need a quick one-pan recipe, you have to try this one 🤍 🌶️Mom’s Easy Spicy Bean Sprout Japchae (Kongnamul Japchae, Glass Noodles) Serves 2–3 Ingredients - Noodles Handful dangmyeon (Korean sweet potato glass noodles), soaked 30 min - Pork ½ lb thinly sliced pork (shoulder, loin, or boneless pork chop) 1 Tbsp minced garlic 1 tsp salt ½ Tbsp sesame oil Black pepper - Vegetables 1 pack bean sprouts, washed ½ onion, thinly sliced ½ carrot, julienned Green onion, chopped - Sauce 2 Tbsp gochugaru 3 Tbsp soy sauce 1 Tbsp sugar 1 Tbsp oyster sauce 1 Tbsp mirin 1 Tbsp sesame seeds 1 Tbsp sesame oil Black pepper ⅓ cup water Instructions 1. Pour in half the sauce and ⅓ cup water. Cover and cook on medium for 6-7 minutes until noodles and sprouts are tender. 6. Finish Stir well. Have you ever had Japchae before? It’s a Korean dish made with sweet potato glass noodles, vegetables, and beef. It’s one of those meals that feels a little special, but it actually very doable at home (especially if you use some of my meal prep tips 😉). Here’s the base Japchae recipe I use (inspired by @recipe_tin) with a few tweaks of my own. All you need: Beef & Marinade • 300 g thinly sliced beef (short ribs, ribeye, or sirloin) • 2 tsp soy sauce • 2 tsp sugar • 2 tsp minced garlic • ½ tsp black pepper Sauce • ¼ cup soy sauce • 2 tsp sugar • ½ tsp minced garlic • 1½ tbsp toasted sesame oil • ½ tsp salt • ½ tsp black pepper Noodles & Vegetables • 250g dried sweet potato noodles • 4 tbsp neutral oil • Vegetables of choice (I used peppers, carrots, zucchini, shiitake mushrooms and spinach) • 2 tbsp sesame seeds Instructions: 1. Marinate the meat Slice meat thinly and mix with soy sauce, sugar, garlic, and pepper. Let sit for about 15–20 minutes. I buy the thinly sliced meat from Costco for this, or buy a sirloin steak and slice it thinly. 2. Make the sauce In a very large bowl, mix together soy sauce, sugar, garlic, sesame oil, salt, and pepper. I make one batch of the sauce and use it throughout the dish during different stages of cooking. I’ll toss the noodles with a couple tablespoons, then add 1/4 cup to the beef, and use the remainder while adding the vegetables. 3. Cook the noodles I boil the water and let the noodles soak (off heat) for 10 minutes or so, then rinse with cold water. This allows the noodles to stay separated and carry the sauce better. 4. Cook vegetables Heat 2 tbsp oil and cook your vegetables (minus the spinach) until softened. 5. Cook the beef Add the beef to the same pan, mixing it with all of the vegetables. Add the spinach once beef is cooked (about 1½ minutes). 6. Toss everything together Add rinsed noodle to your pan and toss everything together until coated. Garnish with sesame seeds and serve warm. Method: 1️⃣ Finely slice your spring onions and tenderstem broccoli, then sauté in a hot pan with a little oil until just cooked but still with a bite. Remove from the pan and set aside. 2️⃣ Thinly slice your steak — I’ve used rump — and fry it in the same pan with a bit more oil until cooked through. 3️⃣ Return the greens to the pan with the steak and sauté together for a further 2 minutes. 4️⃣ Meanwhile, cook your glass noodles according to the packet instructions. Once done, drain and rinse under cold water to stop the cooking process. 5️⃣ For the sauce, mix light soy sauce, dark soy sauce, sesame oil and a touch of sugar in a bowl. 6️⃣ Add the noodles to the pan along with the sauce, then return the beef and greens. Toss everything together and fry for another minute. 7️⃣ Plate up and finish with a sprinkle of sesame seeds on top. Türkçe Yöntem: 1️⃣ Taze soğanları ve brokoliyi ince ince doğrayın, ardından biraz yağ ile kızgın tavada hafif diri kalacak şekilde soteleyin.
