DOMÁCA PIZZA 🍕 Toto cesto je to najlepšie cesto na domácu pizzu — málo droždia, dlhšie kysnutie a výsledok je úplne inde 🤌 Budeš potrebovať: 700 g hladkej pizza múky 480 ml studenej vody 2 g sušeného droždia 18 g soli 20 ml olivového oleja Postup: Do misy si daj všetky suroviny okrem soli a začni miesiť. Ja som použila kuchynský robot od @eta_sk , ale dá sa to aj ručne. Keď sa cesto spojí, pridaj soľ a ešte chvíľku premiešaj. Ak máš čas, nechaj ho pred pridaním soli 15–20 minút oddýchnuť, bude sa s ním lepšie pracovať.🥰 Hotové cesto nechaj kysnúť cca 2 hodiny pri izbovej teplote. Keďže je tam málo droždia, nečakaj, že po hodine extrémne narastie. Ak máš viac času, môžeš ho dať rovno do chladničky na 24 hodín a potom ho len hodinku pred prácou vytiahnuť.✨ Po prvom kysnutí cesto rozdeľ na bochníčky. Mne vyšlo 5 pízz po cca 240 g. Menšie pizze môžu mať okolo 200 g, väčšie 250 g.🤗 Bochníčky vytvaruj do guličiek, daj do uzatvárateľnej nádoby a nechaj v chladničke kysnúť minimálne 8 hodín, ideálne aj 24 hodín.🤩 Hodinku pred pečením ich vytiahni a zapni rúru na maximum. Ideálne ju nahrievaj aj s plechom alebo pizza kameňom. Medzitým si priprav pomodoro základ 🍅 Ak by ste chceli recept aj na ten, napíšte mi do komentáru😊 Cesto tvaruj rukami od stredu smerom von a okraje nechaj čo najviac na pokoji, aby boli nadýchané. Pridaj rajčinový základ, syr a obľúbené suroviny. Pri pizzi platí, že menej je viac.😅 Peč ideálne bez papiera na pečenie, priamo na rozpálenom plechu/kameni. V rúre to trvá cca 5–10 minút podľa výkonu, v pizza peci cca 3–4 minúty. Dobrú chuť 🤌🍕 Spolupráca s @eta_sk #pizza #domacapizza #pizzadough #homemadepizza

Ricetta ⬇️ Pizza napoletana 🍕 (72% di idratazione) Provala anche tu a casa 👨🏻‍🍳 Ingredienti - 1 kg farina tipo 0 (Vesuvio @molinovigevano) - 720 g acqua - 26 g sale - 1,5 g lievito di birra fresco Procedimento 1️⃣ Impasto Sciogli il lievito in 620 g di acqua e impasta con tutta la farina (anche a mano). Dopo aver ottenuto una buona struttura, aggiungi il sale e versa l’altra parte di acqua poco alla volta, continuando ad impastare fino a completo assorbimento. Sono necessari circa 10-15 minuti in toltale per ottenere un impasto liscio ed omogeneo. Copri e lascia riposare 20 minuti a temperatura ambiente. Dopo il riposo fai delle pieghe leggere per rinforzare l’impasto. 2️⃣ Lievitazione Lascia lievitare l’impasto in frigo per 24 ore. Trascorso il tempo, forma i panetti da 260-280 g che dovranno lievitare a temperatura ambiente per circa 6 ore. 3️⃣ Cottura Cottura a 400-430 gradi per circa 90 secondi nel forno a legna (@oonihq @ooni.it). In alternativa nel forno di casa con pietra refrattaria ben calda alla massima temperatura per circa 6-8 minuti. Un altro metodo efficace è quello della padella + forno: 2-3 minuti in padella calda con coperchio e poi sotto il grill del forno per completare la cottura. Pizza Hut style pan pizza! These pizzas ARE SO FREAKING AMAZING, and my god they will be WIPED. I love making homemade pizzas, and so many of you also want to! And this is a fairly simple recipe: so you can easily follow along! - 300g all purpose flour / maida (if you find pizza flour around you then better) - 60-65% water by weight - depends on how much water the flour drinks up - 7-8g salt - 3/4 tsp active dry yeast OR 1/2 tsp instant yeast (this is enough for India’s hot weather. But you can increase the yeast if you’re in a cooler weather) - 2 tbsp olive oil *if you’re using active dry yeast, then you will need to “bloom” it with warm water and 1 tsp honey. You can assistant yeast directly to the flour. Instructions: 1. Mix together the flour, water, instant yeast and salt. *you can add salt after the dough comes together also. Salt makes the dough tougher but the result is the same* 2. Start kneading the dough till it comes together. And then add the olive oil and knead again for 5-6 mins till the dough springs back once pressed. 3. Coat with oil and keep covered for 40 mins in a well oil bowl. 4. After 40 mins the dough will have risen, divide into 2 and make individual tight dough balls. 5. Now you can let this ferment in a warm place till it doubles in size. Or oil the bowls and refrigerate for a slow ferment till it doubles in size (approx 3 hours) let it come to room temp before using. 6. Once fermented, drop the dough in a well oiled cast iron skillet (or a pan that can be put in the oven) and without bursting the air bubbles too much, spread it out on the pan, leaving the edges thick. 7. To form the shape, start by pressing in the centre and moving your fingers towards the edge. 8. Now do a final ferment for 20 mins. 9. Blind bake in an 230C preheated oven for 5-6 mins (optional) 10. Or you can directly put the sauce and toppings and bake for 15-16 mins at 250C, add cheese midway if you don’t want it too browned. 11. Bake on the second rack from the bottom. 12. IMPASTO A MANO🍕‼️ Dopo innumerevoli richieste ho sviluppato per voi la ricetta più semplice e replicabile a casa 🫶 INGREDIENTI: 1kg Farina 0 io ho usato pulcinella (Pizzuti) 700ml acqua a temperatura ambiente 10g di lievito 26g di sale PROCEDIMENTO Sciogli il lievito nell’acqua Aggiungi tutta l’acqua nella farina e impasta fino a quando diventa un unico blocco. Inizia a stressarlo con le mani e solo alla fine aggiungi il sale e impasta ancora con forza. Fai qualche piega di rinforzo Lascia riposare l’impasto per 20min sul piano di lavoro per poi ripiegarlo nuovamente. FAI QUESTO PROCEDIMENTO 2 VOLTE. Prendi una stecca e staglia l’impasto in panetti non superiori a 250g Fai riposare a temperatura ambiente almeno 3 ore (in estate ricorda che i tempi si riducono) Puoi fare la tua pizza e cuocerla nel forno, io ho usato PIZZERIA GOURMET di @arieteilgeniodellacasa #Pizza #impastopizza #pizzadough #homemadepizza #pizzagirl

HOMEMADE PIZZA DOUGH Ingredients 3c flour 1/3c olive oil 1 Tbsp honey 1 packet (2 1/4 tsp) active dry yeast 2 tsp salt 1c warm water Instructions Combine flour, oil, honey, yeast, and salt in the bowl of a mixer fitted with a bread hook. Turn on medium low and slowly drizzle in water, mixing until combined. Increases speed to medium and knead for 8 minutes. Place dough in a greased bowl, cover and let rise 1-2 hours or until doubled in size. Punch dough down and divide into two equal parts. Freeze dough for up to 3 months. TO MAKE THE PIZZA Preheat oven to 425. Shape dough into a circle and place on a pan. Stab with a fork several times to allow steam to escape. Bake crust 8-10 minutes. (About halfway baked) Remove and add pizza sauce, cheese, and other toppings to crust. Bake on the bottom rack fo an additional 10-15 minutes or until the crust is golden and crisp on the bottom. FREEZING PIZZAS Bake crust for the initial 8-10 minutes. Allow to cool. Add sauce and toppings. Flash freeze fully assembled pizzas for 30 minutes. Wrap in plastic wrap and place back in freezer. Detroit style pan pizza at home 🍕🔥 This is my go to easy Detroit dough. crispy bottom, airy inside, caramelized cheese edges every time. 👇🏽 DOUGH:�-315 g bread flour�-245 g warm water�-1 tsp instant yeast�-1 tsp honey�-1 tsp salt�-1 tbsp olive oil Mix wet ingredients together until combined then add dry ingredients(it will be sticky, that’s what you want).�Cover for 10 mins. Remove dough ball and put on lightly floured surface and form into dough ball(WILL BE STICKY) Put back in a large oiled bowl and cover and let rest for 1 hour. PAN STEP:�Oil a metal 8×10 or similar pan generously with olive oil.�Transfer dough into the pan and gently stretch toward the edges. in about 30 mins try and stretch it to reach the corners, it should easily by this point. �Rest another hour or even more for better results until relaxed and puffy. I usually let it rest about 3 hours the more the merrier. SAUCE: Blend 1 can whole San Marzano tomatoes until smooth. Add to a saucepan and season with: -garlic powder -salt -pinch sugar -Italian seasoning Simmer about 1 hour until thick and rich. TOPPING ORDER (Detroit-style matters here):�-put your sauce down on your dough. or on top of the cheese if you want. -cubed mozzarella and jack cheese. usually it’s wisconsin brick cheese, if you can find that then use that ! (all the way to the edges for crispy cheese crust)�-pepperoni or toppings� BAKE:�Bake at 475°F or hottest your oven gets for about 12–15 minutes until edges are dark, crispy, and caramelized underneath. when the cheese is boiling on top it’s usually done and i will turn the broiler on for like 2-3 mins at the end just to get that top nice and brown in some parts. Peste 170 de voturi în care ați vrut rețeta de pizza, vă înteleg, la cum arată ar fi straniu să nu o vreți. Salvați ca să nu o pierdeți.👌🏻 Avem nevoie de: 310 ml apă rece 10 g sare 13 g zahăr tos 7 g drojdie proaspătă(~3g drojdie la plic) 25 g ulei de măsline 500 g făină griș pentru modelare umplutura la dorință: sos de roșii mozzarella salam măsline brânză Dorblu Punem în apa rece zahărul, sarea, drojdia. Amestecăm. Adaugăm uleiul de măsline și făina, amestecăm până omogenizăm. Lăsăm aluatul 15 minute, apoi frământăm până devine neted. Formăm o biluță pe care o punem într-un bol uns cu ulei. Acoperim cu folie alimentară și dăm la frigider pentru 12–48 de ore. Eu l-am ținut aproape 48 de ore. Aluatul va crește frumos în volum, îl împărțim în 2 părți, formăm 2 biluțe pe care le acoperim. Lăsăm 30 de minute la temperatura camerei. Preîncălzim cuptorul la 250°C împreună cu tava. Acum, ori întindem aluatul pe blatul de bucătărie apoi îl mutăm pe hârtia de copt presărată cu griș ca să nu alunece, ori îl întindem direct pe hârtia de copt trecându-l un pic prin griș înainte de asta. Când modelez aluatul stropesc un pic de ulei pe mijlocul lui. Așa e mai ușor să formez bordurile. Lucrăm doar cu mâinile. Partea cea mai colorată, ungem cu sos de roșii, adaugăm cașcaval, salam, măslinele, pe a doua am făcut fără salam, dar am mai adăugat Dorblu. Coacem pe tava fierbinte aproximativ 10 minute, până se rumenește. Aveți grijă sa nu o ardeți, puneți pe mijlocul cuptorul tava. Încercați! #homemadepizza #pizzatime #bakingtime #comfortfood #fy
