This is my SUPER viral Chocolate Guinness Cake, and one that you ovely people still tag me in two years later. Ingredients 💚 For the cake: 240ml @guinness @guinnessgb 140g salted butter @kerrygold_uk 70g cocoa powder + 2 Tbsp Black Cocoa Powder 300g Dark Brown Sugar 50g Golden Caster Sugar 180ml sour cream OR crème fraiche 2 large eggs 4g Flaked Salt 2 Tbsps vanilla extract @ocadouk 250g plain flour 2½ tsp baking powder 100g Dark or Milk Chocolate Chips For the topping: 3 tbsp @baileysofficial 140g icing sugar 300g Mascapone at room temperature 200ml double cream 1 Tbsp Vanilla Extract or bean paste Pinch of flaked salt Method 💚 Preheat oven to 160°C Fan. Grease a 23cm tin with melted butter and set aside. I like to dust mine with a little cocoa powder too. In a large saucepan, combine the Guinness and butter. Place over medium-low heat until the butter melts, then remove from heat. Add the cocoa powder and caster sugar, and whisk until well blended. Combine all the ingredients together and bake for 55 minutes/ 1 hour, or until risen and firm. A skewer inserted into the centre should come out clean. Let the cake cool completely in the pan on a wire rack. Add all the topping ingredients together into the bowl of your stand mixer and using the beater attachment, beat together until thick and creamy. Once the cake is fully cooled, remove it from the pan and place it on a serving plate or cake stand. Spread the frosting over the top of the cake only, so it resembles the creamy head of a pint of Guinness. . . . #chocolateguinnesscake #irishcuisine #irishfood #stpatricksday #cakerecipe

St. Patrick drove out the snakes. I’m bringing the beef. Ingredients for 6 3 tbsp vegetable oil 800g stewing beef steak, cubed 1 onion, chopped 2 large carrots, cut into chunks 100g mushrooms, quartered 2 tbsp plain flour 1 can of 440mls stout 1 beef stock pot 1 tbsp tomato purée 100mls boiling water sprig thyme leaves 1 bay leaf 1 x 375g pack of puff pastry 1 egg yolk, beaten Method Heat half the oil in a large casserole dish. Cook the beef, in 2 batches, until browned all over. Remove from the pan & set aside. Add the vegetables to the casserole dish & cook for 8 mins on a medium heat. Stir in the flour until well coated. Pour in the stout & stir well. Use the wooden spatula to get all bits off the bottom of the pan as you stir. Add the stock cube & tomato purée to a little jug & add the boiling water. Stir well. Add this to the casserole dish. Return the beef to the dish & add the thyme & bay leaf. Cover and simmer for 1½hrs until the beef is really tender. Leave to cool. Preheat the oven to Gas mark 6/200°C/Fan 180°C. Add the beef stew to a large pie/oven proof dish. Place the pastry on top and cut away any excess with a sharp knife. Then use a fork to press around the edge of the pie. Make a small slit in the centre of the pie for air to escape. Brush all over with the egg. Cook for 30–40 minutes until golden and crisp. #Beefpie #irishfood #beefstew #stpatricksdayfood #stpatricks

I’m cooking my way through the recipes that feel like home, and this one is such a classic. Apple butter is one of those thrifty recipes. It is apples cooked down slowly with cider and spice until they turn dark, rich, and almost caramel-like. Everything goes into one pot, left to bubble away until soft, then blended and cooked down again until thick and glossy. Simple, slow, and honestly so worth it. I have been spreading it over warm bread all week (and eating it straight from the spoon, no shame). Ingredients 1.5kg apples (Bramley + sweet apples) 200g soft brown sugar 200ml apple cider @aspalluk 1 tsp cinnamon ½ tsp ground cloves ½ tsp nutmeg 1 tsp vanilla extract 1 lemon, zest and juice Pinch of salt Method Peel, core, and roughly chop your apples, then add them straight into a large, heavy-based pan along with the cider, sugar, spices, vanilla, salt, and lemon juice and zest, giving everything a good stir so the apples are well coated. Place over a medium heat and bring to a gentle simmer, allowing the sugar to melt and the apples to begin releasing their juices until the whole mixture smells warm and fragrant. Turn the heat down low and let it bubble away gently for 1.5–2 hours, stirring every so often, until the apples are completely soft and collapsing into a thick, chunky purée. Take it off the heat and blend until smooth, then return it to a low heat and continue cooking, stirring more regularly now to stop it catching on the bottom, as it slowly thickens and darkens into that deep, rich brown. Keep going until it becomes glossy and spreadable, holding its shape on a spoon and leaving a trail when you drag it through. Let it cool slightly before spooning into clean jars, it will thicken a little more as it cools. . . #englishfood #applebutter #britishfood #jammaking #irishfood
