To be honest, I make fresh pasta probably more for myself than anyone, because once you have tasted rich, fresh, homemade pasta, the boxed stuff just isn’t as good… this is a simple pasta dough recipe that I use for any everything from fettuccine to ravioli! • 2 cups (250 g) 00 flour • 1 ½ cups (200 g) semolina flour • 4 whole eggs • 2–4egg yolks (4 makes it very rich and you will need to add a bit of flour most of the time but I like it rich) Method 1. Sift the flour into a mound on a board or countertop.(or use a bowl if preferred). Make a deep well in the center. 2. Add the eggs and yolks. Beat gently with a fork, pulling in flour gradually. 3. Knead 8–10 minutes until smooth and elastic. The dough should be firm, not sticky. 4. Wrap in plastic wrap and rest 30–60 minutes at room temperature. 5. Roll out with a pasta machine to thin sheets (setting 6–7, depending on machines use a @marcatopasta ). Cut into fettuccine (about 6–7 mm wide). 6. If you haven't tried it yet, I recommend putting it on your bake list 🙌🏻 Ingredients: 3 eggs 250 g ricotta cheese (1 cup) 200 g almond flour (2 cups) 130 g sugar (1/2 cup + 2.5 tbsp) 75 g butter (1/3 cup) Lemon zest to taste 1 tsp vanilla extract Instructions: 1. Prepare ingredients by separating the eggs, placing the yolks in one bowl and the whites in another. 2. In a large mixing bowl, whisk together the egg yolks and sugar until the mixture becomes creamy and pale. 3. Add the ricotta cheese, softened butter, vanilla extract, and lemon zest to the yolk-sugar mixture. Mix until all the ingredients are well combined and smooth. 4. Gradually mix in the almond flour, ensuring it's evenly distributed throughout the batter. 5. In a separate bowl, whip the egg whites until stiff peaks form. 6. Gently fold the whipped egg whites into the almond-ricotta batter, being careful not to deflate the mixture. 7. Grease a 8-inch (20 cm) cake pan and line the bottom with parchment paper. 8. Pour the batter into the prepared cake pan and smooth the top. Sprinkle almond flakes evenly over the top of the batter. 9. Place the cake in the preheated oven at 350°F (180°C) and bake for about 50 minutes. 10. Allow the cake to cool in the pan for about 10 minutes before transferring it to a wire rack to cool completely. Ingredienti per circa 12/13 pizzette: 500g di farina con almeno 13g di proteine (io ho usato nuvola) 340g di acqua 5g di lievito di birra fresco 13g di sale Patate Rosmarino Pepe Olio Procedimento: Impasta seguendo la regola del FALSO dove F sta per farina A sta per acqua L lievito S sale e O un grasso che è facoltativo perché dipende dagli impasti ed in questo caso non c’è. Fai lievitare fino al raddoppio, dopo un’ora fai una piega di rinforzo. Prepara palline da 50g e falle riposare per circa 30 minuti. Nel frattempo taglia con la Mandolina le patate e mettile in acqua per un po. Stendi le palline e metti sopra le patate, sale, pepe e olio. Inforna statico al massimo alla base per 7 minuti circa e poi al centro. Comfort food at its finest! @cookwithfez Serves: 4 to 6 Pan size: 11-inch (28cm) round baking dish 🧀 Ingredients: 4.4 lbs potatoes (2 kg) 2 large sweet onions 7 oz smoked pancetta, diced (200 g) 1/4 cup dry white wine (1/2 wine glass) 1/2 cup grated Parmigiano Reggiano (40 g) 2 tablespoons heavy cream (30 ml) Mixed herbs (sage, thyme, rosemary) – to taste Butter – as needed (for cooking and greasing) Soft cheese (e.g., Fontina, Gruyère, or similar) – as desired Salt and black pepper – to taste 👩‍🍳 Preparation: Prep the base: Finely slice the onions and dice the pancetta. Cook pancetta & onions: In a large pan, cook pancetta over medium heat for 5 minutes. Add onions and cook for about 10 minutes, until soft. Flavor it: Add a few cubes of butter and the chopped herbs. Deglaze with white wine and simmer for 2 more minutes. Slice potatoes: Thinly slice the potatoes using a mandoline. Use a round cutter to trim each slice into smaller, uniform circles for even cooking and a clean look. Add soft cheese: Slice or cube some soft cheese to include between the layers for extra flavor. Layer the gratin: Grease your 11-inch pan with butter. Start layering the potato slices tightly together. Season with salt and pepper. Add some of the onion-pancetta mixture. Add soft cheese, a sprinkle of Parmigiano, and a drizzle of cream. Repeat this process at least 3 times. Finish & bake: Shape the top layer neatly. Season and sprinkle with the remaining Parmigiano. Pizza that’s been for a swim in hot oil. 🍕🍕🍕🍕🍕Pizza Fritta Dough Makes: 8-10 small pizza fritte Ingredients • 500 g plain flour (or tipo 00 if you have it) • 325 ml warm water • 10 g salt • 3 g dry yeast (or 10 g fresh yeast) • 1 tsp sugar • 1 tbsp olive oil (optional, but helps softness) Mix the warm water with sugar and yeast. Let it sit 5 minutes until slightly foamy. Add flour and salt into a bowl, pour in the yeast mixture, and start mixing. Add the olive oil and knead for 8 to 10 minutes until smooth and stretchy. Cover and let rise for 1.5 to 2 hours, or until doubled. Knock the dough back, divide into 8 small balls, cover and rest 20 minutes. Heat oil (I use olive oil) to Roll each ball into a disc. The oven does all the work and filling your kitchen with delicious aromas 😍 Give it a try and let me know in the comments what you think 🤔 SAVE (bookmark icon) and SHARE (paper plane icon) for more content from me (if you don’t like and share Instagram hides my posts - their rules not mine) Serves 4 Pre-heat oven 200C 1kg leg of lamb Rub all over with olive oil, salt, pepper, mixed dried herbs (I used oregano, thyme, rosemary) 2 bulbs garlic (sliced in half skin on) 2 onions (sliced in half skin on) Put in oven for 30mins Remove from oven and add 500ml of stock, cover tightly with foil and reduce oven temperature to 150C. Cook for 3.5hours. Remove from oven, remove foil. 2 lemons sliced in half, squeeze lemon over and thrown in the skins Cook for a final 30mins uncovered Remove, shred and enjoy!
