TUNA-LOADED CRACKERS ✨ Only have 5 minutes to make lunch? This recipe is for you. I have been making this for years and it is still one of my most popular recipes. Loved for how easy, nutritious, and yummy it is! Ingredients: 95g (3.3 oz) tin tuna, drained 1 tbsp Greek yogurt 1 tsp Dijon mustard 1 celery stalk, diced 1 tbsp finely chopped red onion 1 pickle, finely diced 1 tbsp chopped chives 3 cruskits (use rice cakes for gluten-free) ½ avocado, smashed ½ cucumber, sliced ½ tsp chili flakes (optional) Method: Combine the tuna, Greek yogurt, Dijon mustard, celery, onion, pickle, and chives in a small bowl. Season with sea salt and black pepper and mix until combined. If looking a little dry add some extra yogurt until a creamy consistency is reached. Spread the avocado across the cruskits. Then add the sliced cucumber. Spoon the tuna mix on top and garnish with a sprinkle of chili flakes, if desired. Time to make: 5 minutes Serves: 1 #jshealth #quicklunch #healthyrecipe #tunasalad

The real magic happens with the ricotta icing that melts in your mouth… so good! ⁠Looking for a dairy-free option? ⁠⁠Skip the icing - the choice is yours. 🤍⁠ ⁠ Ingredients:⁠ - 1 ½ cups (160g) almond meal⁠ - ½ cup (45g) desiccated coconut ⁠ - ½ cup (60g) spelt flour, or flour of choice ⁠ - 1 tsp bicarb soda⁠ - 2 eggs⁠ - ½ cup maple syrup ⁠ - ⅓ cup lemon juice ⁠ - 1 tsp vanilla extract ⁠ - 2 tbsp lemon zest ⁠ - 1 cup blueberries ⁠ ⁠ For the icing: ⁠ - 1 ½ cups (300g) smooth ricotta ⁠ - 1 tbsp maple syrup ⁠ - 1 tbsp lemon juice⁠ - 1 tsp vanilla extract⁠ - Lemon zest ⁠ ⁠ Method:⁠ Preheat the oven to 170°C or 335°F. Line a square tin (20cm by 20cm) with baking paper.⁠ ⁠ In a large mixing bowl combine the almond meal, desiccated coconut, flour and bicarb soda. Whisk to combine and smooth out any lumps.⁠ ⁠ In another mixing bowl, whisk together the eggs, maple syrup, lemon juice and vanilla.⁠ ⁠ Pour the wet ingredients into the dry. Gently fold together using a spatula, you don’t want to over mix the batter. Add in the lemon zest and blueberries and fold again.⁠ ⁠ Spoon the mixture into the lined tin. Bake in the preheated oven for 25 minutes. ⁠ ⁠ Once the cake is cooked, allow to rest in the tin for 15 minutes before removing from the tin and cooling on a baking rack. ⁠ ⁠ Whilst the sliced is cooling, whisk together the ricotta, maple syrup, vanilla and lemon juice. Once the slice has cooled, spread the icing onto the top. ONE POT CHICKEN & MUSHROOM PASTA ✨ Is there anything better than a one pot dish? I make this pasta dish all the time. It’s so easy, nourishing, and hardly any washing up. A total must-try! Ingredients: 400g (14.1 oz) chicken thigh, diced 1 tsp sweet paprika 1 tsp dried oregano Sea salt & black pepper 2 tbsp extra virgin olive oil 1 red onion, finely diced 4 garlic cloves, minced 200g mushrooms, sliced ½ cup (70g) kalamata olives 400g (14.1 oz) tin tomatoes, diced 750 ml stock (we used vegetable stock) 2 tbsp tomato paste 300g (10.5 oz) pasta 60g (2.1 oz) baby spinach 50g (1.7 oz) parmesan cheese, grated (omit for dairy-free) ¼ cup chopped parsley (or basil leaves) Method: Place the chicken thigh in a bowl and season with the sweet paprika, oregano, and a generous pinch of sea salt and black pepper. Toss to coat evenly and then set aside whilst you prep the vegetables. Heat the olive oil in a large lidded pot over a medium high heat. Add the chicken pieces and cook for 4–5 minutes or until just cooked through. Use a slotted spatula to transfer the chicken to a bowl. Add the onion and garlic to the same pot with the leftover oil and chicken juices. Sauté for 3 minutes or until softened before adding in the sliced mushrooms. Cook for 3 minutes or until the mushrooms release their juices and start to reduce in size. Add the olives, tinned tomatoes, stock, and tomato paste. Bring to a boil and then add in the pasta. Reduce to a simmer and cover with a lid. Simmer for 15 minutes. Remove the lid and add the chicken back to the pot along with the baby spinach leaves. Stir for 2 minutes until the baby spinach has wilted. Remove from the heat and add in the parmesan cheese and chopped herbs. Note: the pasta will look very saucy but as it cools, the pasta will soak up some of the liquid. Serve topped with extra parmesan cheese and chili flakes, if desired. Keep any leftovers in an airtight container in the fridge for up to 3 days. Heat before serving. Time to make: 35 minutes Serves: 4 #jshealth #onepotmeal #healthyrecipe #chickenpasta

Paired with perfectly baked sweet potato rounds, fresh parsley and creamy goat’s cheese - we promise this will be a crowd-pleaser. ⁠ ⁠ Ingredients:⁠ 1 (700g) large sweet potato, sliced on the round ⁠ 2 tbsp extra virgin olive oil⁠ 1 tsp sea salt ⁠ 2 red onions, finely sliced⁠ 2 tbsp balsamic vinegar⁠ 1 tbsp coconut sugar, or brown sugar⁠ 2 cups baby spinach leaves⁠ ¼ bunch parsley, leaves & stems finely chopped⁠ ½ cup (70g) toasted almonds, roughly chopped⁠ 150g goat’s cheese, or feta, omit for dairy-free ⁠ ⁠ For the dressing:⁠ 1 tbsp extra virgin olive oil⁠ 1 tbsp red wine vinegar⁠ 2 tsp wholegrain mustard⁠ 2 tsp maple syrup⁠ ¼ tsp ground cinnamon⁠ ⁠ Method:⁠ Preheat the oven to 200°C or 395°F. Line a baking tray with baking paper. ⁠ ⁠ Spread the sweet potato pieces across the baking tray. Drizzle with 1 tbsp extra virgin olive oil and 1 tsp sea salt. Use your hands to toss the ingredients to ensure the potato is evenly covered in oil. Bake in the preheated oven for 35 minutes or until cooked through. Note: cook time will depend on how thick your sweet potato slices are. ⁠ ⁠ To make the caramelised onions, heat the remaining olive oil in a non-stick frying pan over a medium high heat. Add the sliced onions and saute for 3-4 minutes or until they start to soften. Add the balsamic vinegar and the coconut sugar to the pan. Cook for 7-10 minutes or until the liquid has reduced and the onions are caramelised. ⁠ ⁠ To prepare the dressing, combine all of the ingredients in a small bowl or jar. Whisk or shake to combine. Season to taste with sea salt and black pepper. ⁠ ⁠ To assemble the salad, spread the baby spinach leaves across the base of a large serving platter. Top with the sweet potato slices, chopped parsley, toasted almonds, caramelised onion and goat’s cheese, if using.
