RECIPE BELOW ⇩ Save this if you love: ✅ Cosy, comforting soups ✅ Big flavour with simple ingredients ✅ A hearty miso soup Tonjiru – Japanese Pork Miso Soup This is one of my favourite ways to make soup richer, deeper, and full of flavour. This method is called Kasane-ni in Japan — a layered cooking technique that lets the flavours slowly melt together 🥣 – Ingredients – -Shiitake mushrooms -Konnyaku -Mooli (Daikon) -Carrots -Sliced pork belly -Spring onions -Tofu -Miso -Dashi powder -Water -A pinch of salt Use as much of each as you like -Method- ①Add a pinch of salt to the bottom of a pot. Layer the ingredients in the order listed, starting with shiitake and ending with spring onions. ②Sprinkle in some dashi powder, add about 50 ml of water, cover, and steam over medium heat. ③Once the vegetables have softened, add more water. (I usually add boiling water from a kettle.) ④Cover and bring to a boil. Turn off the heat, then dissolve the miso. ⑤Add the cubed tofu. ⑥Turn the heat back on and warm the tofu through. *Do not boil after adding the miso. These kinds of easy, 30 minute meals are exactly what I need after these dang time changes 🫩 I like that I can keep these beef slices in the freezer so I always have the ingredients ready. I also often serve the leftovers over udon to switch things up. The basic recipe is simple - 1 sliced onion and 1 lb sliced beef simmered in a broth of dashi, soy sauce, mirin, sake, sugar, and a little grated ginger. 👇Here’s a simple way to make miso soup at home. 【Ingredients】 (2 servings) ・400ml dashi ・2tbsp of miso paste (If the soup tastes too light, add about 1 more tablespoon of miso.) ・150g soft tofu (about a palm-size piece) ・1 tbsp dried wakame For potato & onion miso soup: ・1 potato (about 150g) ・1/4 onion (or 1/2 if small) ⸻ 【Instructions】 1.Heat the dashi over medium heat. 2.If using vegetables like potato or onion, cook them first in the dashi until soft. If using tofu and wakame seaweed, Just add them into dashi right away and heat it over medium heat until it gently starts to simmer. 4.Lower the heat,then dissolve the miso gently. If you have green onions (leek), slice them thinly and add at the end for a nice color. And done!✨ 【Tips】 🌱If you’re new to miso, start with rice miso (Koji miso). A medium-colored miso is a good choice. 🌱You can use either soft or firm tofu, but I personally prefer soft tofu — it’s easier to eat😊 #dashi #japanesehomecooking #misosoup #kombu #bonitoflakes

A true Japanese home-style dish, perfect with warm rice 🤍 ✨ Cheese-Stuffed Fried Tofu (Day 18/30) ⸻ ◽︎ Ingredients (2–3 servings) • Fried tofu (atsuage) — 2 pieces • Cheese — 3 slices • Potato starch — as needed • Oil — 1 tsp Sauce: • Sake — 3 tbsp • Soy sauce — 2 tbsp • Sugar — 1.5 tbsp Optional: sesame seeds ⸻ ◽︎ Steps 1. Cut the fried tofu into pieces. 2. Make a slit in the side of each piece. 3. Fold the cheese and stuff it inside. 4. Lightly coat with potato starch. 5. Pan-fry both sides until golden. 6. Add the sauce and simmer until glossy.
