Matzah Hot Dogs 🌭 To make 8 Hotdogs Ingredients: 8 sausages 4 square pieces of matzah 2 eggs Small amount of oil Ketchup or you favourite dip Instructions: Beat 2 eggs in an oblong dish Soak the matzah, one piece at a time in the egg for a few minutes making sure that the egg is absorbed into the matzah as much as possible. Pour a small amount of oil into a fry pan and gently transfer the egged matzah. Cook gently on both sides, pressing the matzah down until it is soft and flexible. As soon as it comes out of the fry pan, cut in half and place a sausage on each piece and roll. Place into an airfryer until golden brown. Serve with your favourite dips. #jewishfood #passover

To make: Shawarma�500g boneless, skinless chicken thighs�2 tbsp olive oil�2 tsp ground cumin�2 tsp ground coriander�1½ tsp smoked paprika�1 tsp turmeric�½ tsp cinnamon�½ tsp allspice (or mixed spice)�3 garlic cloves, grated�Juice of ½ lemon�Salt & black pepper Harissa mayo�3 tbsp mayo�1–1½ tsp harissa paste�Squeeze of lemon�Pinch of salt Spicy pickled red onion�Very finely sliced red onion�Vinegar + sugar + salt�Chilli flakes or fresh chilli�Sumac Method: Mix into a thick marinade.�Coat chicken well and marinate at least 30 mins (overnight = elite).�Fry on high until charred and juicy or roast at 220°C for 18–20 mins.�Rest, then slice thin. This was genuinely a joke. So so good. Chicken Schnitzel * 2 chicken thighs or breasts, butterflied * Salt * Black pepper * Plain flour * 1 egg, beaten * breadcrumbs * Sesame seeds * Neutral oil, for frying * Lemon wedges (essential) Challah * 4 slices challah (day-old works best) * Soft butter or oil, for toasting Sauce * Tonkatsu sauce (bottled) * 1 tsp Dijon mustard + 1 tsp mayo Slaw * Finely shredded white cabbage * Rice vinegar or lemon juice * Pinch of sugar * Salt Method Season chicken generously with salt and pepper.�gently pound to an even thickness - thin but not ragged. Set up three bowls: 1. Flour + S&P 2. Egg 3. Breadcrumbs + sesame Coat chicken: flour → egg → panko, pressing the crumbs on firmly. Heat a shallow layer of oil in a pan over medium-high heat (about 170–180°C). Fry schnitzels 3–4 minutes per side until golden, crisp, and cooked through.�Drain briefly on kitchen paper. While hot, squeeze lightly with lemon -this is key. Toss cabbage with vinegar, sugar, and salt. Lightly butter or oil the challah and toast cut-side down in a pan until golden but still soft in the middle. Assemble 1. Bottom slice of challah 2. A little tonkatsu sauce 3. Schnitzel slices 4. My family won’t go through Shabbat morning without it ☺️ Ingredients: 1 kg all-purpose flour @bobsredmill 10 g baking powder 3 tbsp granulated sugar 1 tbsp honey 10 g salt 800 ml filtered water 100 g butter or margarine, melted ½ cup neutral oil Method: In a large bowl, mix the flour, sugar, salt, and baking powder. Dissolve the honey in the water, then pour it into the dry ingredients. Mix by hand until a rough dough forms. It won’t be smooth at this stage. Cover and let rest. Perform a stretch and fold every 40 minutes, for a total of 6 times. Lightly wet your hands each time to prevent sticking. Keep the dough covered between each fold with a plastic bag or clean kitchen towel. After the final fold, divide the dough into 12 portions. Work one at a time, keeping the rest covered. Lightly dip each portion in flour without pressing, just a gentle coat. Place on a tray. Once all are done, cover and let rest for 45 minutes. Mix the melted butter (or margarine) with the oil. Lightly, oil your work surface. Take one dough ball at a time. Dip your hands in the oil mixture and gently press the dough onto the surface to start flattening it. Stretch the dough very gently, working outward, until it becomes very thin, almost translucent. Small holes are fine, but avoid large tears. Lightly coat the surface with the butter and oil mixture. Fold the left side inward, then fold the right side inward to create straight edges. Starting from the bottom, roll the dough upward into a long strip, then continue rolling into a tight coil. Line an aluminum jachnun pot with parchment paper. Place each rolled jachnun into the pot, fitting them snugly next to each other. Cover well with a lid. Bake overnight at 220°F / 110°C. There’s no need to worry about burning at this low temperature. Place it in the oven before going to sleep and it should be ready by morning. If it needs more color, slightly increase the temperature toward the end without removing the lid. Serve with hard-boiled eggs, grated fresh tomatoes, schug, and tahini if you’d like. #jachnun #jewishfood #pullapartbread #familyrecipe #brunchideas
