Beet Kvaas 1/2 organic beets with skin on 2 tbs ginger with skin on Distilled water Jars Organic salt (not table salt) Chop up the beets and ginger. Place in a jar. Add the salt and water. Place jars in a dark cupboard. Burp the jar every 3rd day. Strain it into another jar and start with a new batch. Drink about 30ml of the beet fermented water at first and work your way up to a higher quantity. You can use the same beets and ginger 3-4times. Beet Kvaas Continuing with our H for Healthy Drinks series we have got for you BEETROOT KVASS - a fermented drink made by keeping beets in slightly salty water for a few days or up to a week. Its tastes quite like beet juice - earthy, sour, and slightly salty. The preparation is similar to that of the more popular carrot kanji and is really simple. - Just chunk up (cut in large chunks) some beets and add them to a clean mason jar. - Add some salt and top it up with water. Be sure to leave about and inch or more of space at the top and screw on the lid tightly. - Now you need to keep this as it is for a bit - it may be done in a day (in warmer climates) or may require a week. Do note that some bubbling at the top is fine as it signals that the microorganisms are at work but to much of those or a foul smell signal that it’s gone bad. And yes, you can eat up the beets left at the bottom - use it as a pickle or like us, add it to your favourite salad. Nutritionally, it is similar to beet juice with the exception that it contains less sugar. Beet Kvass comes with all the benefits of beets plus some more- - cleanses the blood and so helps in clearing up the skin - reduces fatigue, combats chemical sensitivities, allergies and digestive problems, and - is specifically recommended for those suffering from constipation. A shot (about 30 ml or a little less than quarter glass) of beet kvaas before breakfast 3-4 times a week is sure to do wonders for your gut health, immunity and skin. #TopTip when purchasing fermented drinks look for both #unpasteurised and #unfiltered on the label. So how do you know if you have bought a live authentic water Kefir or Kombucha? It's complicated when you dive into it, but we tried to simplify it for you. There are two ways in which large commercial producers extend their shelf life and they are with pasteurisation or filtration . By pasteurising you are heat treating a product to kill off the live cultures and this can be obviously a great thing for lots of products. The other method which is not as well known to the public is filtering a beverage to such a fine level that you can remove any of the good bacteria or yeast. The problem begins when you look at a label in a quest to understand if the drink you just bought is an authentic produced water kefir or kombucha. Lots of them state the words "Raw" or "Live" on the label and often include." Unpasteurised. However what they are not telling you is that they are filtering the product to remove the yeast and bacteria! So my Top Tip when it comes to the labels is to see that they state the drinks are both "Unpasteurised and unfiltered". If either of these words are missing, then that's what they are doing to the drink. I essentially have no problem with drinks that are stabilised as above, but from the consumers point of view, I wish they were just open and transparent about it on the label. These stabilised drinks should still contain beneficial fermented compounds and can be marketed in this manner and called a soda. I have tagged a few fantastic Irish producers here that are authentic and don't filter or pasteurise their products, so when you are out and about you can look out for them on the shelves. #authenticferments #fermenteddrinks #waterkefir #kombucha #kvaas #kefir #supportsmallbusiness #unpasteurized

Indian smoked 💨chaas ( my mom’s traditional recipe) is an ideal probiotic drink! 🥛 Made with home set dahi, 🍚 water 💦 and some spices🧂, it’s one of the most Indian traditional probiotic drink 🍶we have had since generations👨‍👨‍👦‍👦. Few other powerful ones are sauerkraut, kefir, panta bhaat, pickles, beet kvaas, kanji. I am sharing this recipe during monsoons 🌧️ as most people stay away from curd/yoghurt/chass during monsoons but for improved immunity we need a healthy gut and probiotics are a must🍚. So this is a reminder ⌚for everyone to not 🚫 skip their natural source of probiotics. If you have an active cold🥶/cough 🤧or fever 🤒then this can be avoided for few days but once settled please start again. Smoked chaas 💨with ghee 🛢️ and hing is so soothing for the gut and the aroma 😍 makes me fall in love with it over and over again. Smoking it with ghee and spices makes it even more digestible. One can add spices of choice to the buttermilk like pudina🌱/chillies 🌶️/roasted cumin powder 🧂/black salt🫙/coriander. Vegans can have peanut 🥜/cashew chaas !! Aim for home set curd (vegans/ non vegans) as the store bought ones are mostly pasteurised and don't contain active bacterial strains🫙 P. S.
