Topoi — a humble Fijian dumpling made from pantry basics: flour, coconut cream, and a little bit of time. A recipe shaped by colonial influence, but transformed into something deeply Fijian and deeply personal. Growing up, Mum would make big, soft balls of Topoi… we’d tear them open, slather them in butter, jam, sometimes peanut butter — whatever we had. It wasn’t fancy. It wasn’t expensive. It’s meaty and Saucey, with my homemade Sofrito and plátanos we stare at for a week waiting for the perfect sweetness.. a healthy layers of cheese after each layer of Saucey picadillo…. the Fluffy white rice on your fork with every delicious bite of Pastelón. The salad, simple but needed- crack open a can of your favorite soda and enjoy. 🫰🫰🫰
