This recipe is the ultimate proof that garden vegetables can create a depth of moisture and fudginess that you just can’t get from a box. By using a high-fiber oat and gluten-free blend, we get a perfectly textured, wheat-free treat that’s as decadent as it is wholesome. The Ultimate Fudgy Beetroot Cake Ingredients: • Beetroot Puree: 210g (1 cup) • Milk of choice: 250ml (1 cup) • Oil: 125ml (1/2 cup) • Coconut Sugar: 150g (3/4 cup) use any sugar alternative • Melted Chocolate: 50g (1/3 cup) • Oat Flour: 100g (3/4 cup) • GF 1-to-1 Flour: 100g (3/4 cup) — @bobsredmill Bob’s Red Mill 1-to-1 • Cacao Powder: 50g (1/2 cup) • Baking Powder: 1.5 tsp • Baking Soda: 1/2 tsp 2-Ingredient Glossy Glaze: • 3 tbsp Maple syrup • 2 tbsp Cacao powder Instructions: 1. Prep: Preheat oven to 180°C (350°F). Grease and line a round cake tin. 2. Wet: Whisk together beet puree, milk, oil, sugar, and melted chocolate until smooth. 3. Dry: Sift in both flours, cacao, baking powder, and soda. Fold gently until just combined. 4. Bake: Pour into the tin and bake for 40–45 minutes or until a skewer comes out clean. 5. Glaze: Once the cake is completely cooled, whisk the maple syrup and cacao until thick and glossy. Pour over the center and spread to the edges. 6. ONE PAN RISONI MARRY ME CHICKEN 🍗 Ingredients • 3 chicken breasts, diced • 1 tbsp olive oil • 3 garlic cloves, crushed • 1 ½ tsp paprika • ½ tsp garlic powder • ¼ tsp onion powder • ½ tsp dried oregano • 2 tsp salt • ¼ tsp pepper • ½ cup sundried tomatoes • 1 cup risoni pasta • ¼ cup tomato paste • 300 ml cream • 2 ¾ cups chicken stock • ½ cup grated Parmesan • A large handful of spinach • Squeeze of lemon Serves 6 ⸻ Method 1. Dice chicken and place into a bowl. 2. Heat a large frypan over medium–high heat. 3. Add oil and cook chicken until browned. 4. Add garlic and all spices; mix well. 5. Stir in sundried tomatoes and risoni. 6. Add tomato paste, then pour in cream and chicken stock. 7. Cover and cook on low for 10–12 minutes, stirring frequently so the risoni doesn’t stick to the bottom. 8. Add spinach to wilt, then stir through Parmesan until melted. 9. Finish with a squeeze of lemon.
