For the dough-
Warm 1 cup water, add 100gms sugar, let it melt and boil.
Add 80gms Oil and 80gms Ghee to the sugar water.
In a plate, add 500gms refined wheat flour and 200gms Semolina/rawa. Add Salt Mix it well together.
Now add the boiled water little by little to the flour mix and keep kneading it till it turns into a soft dough.

Make portions of the dough and flatten it with a roller. Shape the flattened dough in the shape of little triangles to make the Kormolas or follow the technique shown in the video to make the star shape.
For the Kulkuls, shape the dough into tiny balls and use a brand new comb or a fork to shape it into small curls.

Fry these on high flame till they’re slightly brown and then turn the flame low until golden brown. Fry in batches.
Add powdered sugar to the kulkuls (optional)
And ENJOY!!

Kormolas and Kulkuls are among the most loved Christmas-time sweet treats.
Kormolas are also called ‘Phoolancho Kalyo’ meaning Flower-Bud Cookies, while Kulkuls are referred to as ‘Sweet Curls’.

1 & 1/2 Cup All-Purpose flour (Maida)

Goan Christmas sweets 🥐
Short Story - Right from when I was 2years old I used to stay at babysitting during the day. Aunty Josephine, who took care of me, was Goan catholic. Every Christmas she used to give us these sweets and a gift. I miss her 🫶🏼
Attempted kulkul and kormolas for the first time ever and it turned out super tasty.

Ingredients -
Semolina/Rava - 3cups of 1/8
Melted Ghee - 3cups of 1/8
Mix and leave it to soak for 15mins
Sift All purpose flour/Maida - 3cups of 1/2 or
Sugar powder - 6 table spoons
Pinch of salt
Vanilla Extract - 1 tea spoon
Milk - 4 table spoon (Add it slowly)
Mix and prepare dough, add extra milk/maida if required
For kormolas add food colour red/pink
Cover with cloth and let it rest for 30mins
Use fork/hair comb to prepare kulkuls
Fry kulkul and kormolas in oil
Garnish with sugar powder
