We get it: 🤔 When people hear that we’re composting cheese dust, white chocolate chips, or frosting powder, the first reaction is usually something like: wait, you’re putting junk food in compost that grows vegetables? Fair question. Here’s what’s actually happening. There’s both a science and an art to processing large quantities of depacked food waste into compost. When we receive food-grade material, whether it’s dairy byproduct, starchy powder, or sugar, it doesn’t just get dumped into a pile. It gets carefully metered into our windrows at specific ratios, blended with carbon-rich material like wood chips or straw, and managed for moisture and temperature. That balance is everything. Too much of any one input and the pile gets anaerobic, smelly, and slow. Get it right, and you’ve got a thriving microbial ecosystem doing exactly what nature designed it to do. And here’s the part that really matters for the skeptics: by the time composting is done, there is no cheese dust anymore. Microbes, bacteria, fungi, actinomycetes, have broken that material down to its molecular building blocks. Nitrogen. Carbon. Phosphorus. Calcium. What started as a neon orange powder is now just elemental nutrition, indistinguishable from anything else in the finished compost. Plants don’t know the difference between a nitrogen molecule that came from a bag of Cheetos versus a grass clipping. They just absorb what’s available. That’s not marketing, that’s biochemistry. We manage this process every single day with attention to feedstock ratios, carbon-to-nitrogen balance, temperature logs, and curing time. The end product gets tested. It meets standards. And it grows things beautifully, because good compost is good compost, regardless of what went into the front end of the process. So the next time you hear that we’re composting “processed food,” know that we’re not just throwing trash in a pile. That means lots of movement has happened (cuz remember soil is a living thing, re: bugs & microbes) and that the compost has been incorporated richly into the existing soil, bettering it overtime. Organic matter, humus, compost enriches our soils by altering its composition (think changing sandy and clay) and allowing it to be fertile enough to grow whatever the fuck we want. I do these 4 things to ensure a positive outcome and set my compost up for success. A few things to note: 1) having your compost on the earth is like an invitation to all the bugs and worms to join the fun 2) a brown layer first keeps rodents away and ensures proper drainage 3) adding finished compost gets those microbes in there ready to start breaking shit down 4) mixing your scraps and browns instead of layering gets the decomposition process jumpin!
