Colombian patacones🍌🥩🇨🇴 > I was craving a home-cooked meal, the way my grandma used to make it. Slow cooked shredded beef with a guiso over a crunchy patacon (Colombian fried plantain). Who will keep her recipes and traditions alive if I don’t learn to cook like her? 💫Ingredients: 3 green plantains 4 lbs beef 1 red onion 1 red pepper 2 carrots 1 tbsp paprika 1 1/2 tbsp sea salt 1 tsp black pepper 1 tbsp dry parsley 1 1/2 cups water 1 tomato Green onions 3 cloves garlic 1 tbsp olive oil 1 quart frying oil 1 avocado 2 tbsp lime juice 1 jalapeño Cilantro 1/4 cup mayo 1 tsp salt Add beef, red onion, pepper, and carrots to a Dutch oven or pressure cooker. Follow with spices, paprika, pepper, and parsley, and cover with water. Cook on low heat, covered, for 2 1/2 hours using a Dutch oven and about 1 1/2 hours using a pressure cooker. You will know it’s ready once you can easily shred the beef and the vegetables become soft. To make the guiso/hogao, dice tomato and green onion, purée garlic, and cook over medium heat in a large pan with olive oil and some salt and pepper. Cook for about 8 minutes, stirring frequently until the onion becomes soft. Remove the steak from the pot and shred it into pieces using two forks. Take the softened vegetables and 1 cup of the broth left in the pot (save the rest for a different recipe), and process using a blender until smooth. Pour the blended veggies and beef into the pan with guiso. Stir well and continue to cook for about 5 more minutes — taste and season with more salt and pepper if necessary. Set aside. My ultimate comfort food…. Sofrito oxtail (Rabo), pan-seared first, then slowly braised with stock and red wine until it’s lick-off-the-bone tender. Served with sweet Hawaiian plantains and fluffy white rice to soak up every drop of that rich sauce. Some dishes don’t just feed you… they hug your soul. Sofrito Braised Oxtail Serves 4–6 Ingredients For the oxtail - 3–4 lbs oxtail - Salt - Fresh cracked black pepper - 2 tbsp olive oil For the sofrito - 1 small onion, chopped - 1 green bell pepper, chopped - 4 garlic cloves - ¼ cup cilantro - 2 tbsp culantro (recao) - ¼ cup olive oil For the braise - 2 tbsp tomato paste - 1 cup red wine - 2½ cups beef stock - 1 bay leaf - 1 tsp oregano, cumin, goya package Instructions 1. Preheat oven to 325°F. Season the oxtail generously with salt and freshly cracked black pepper. 2. Heat olive oil in a large Dutch oven or heavy pot over medium-high heat. Sear the oxtail on all sides until deeply browned. Remove and set aside. In the same pot, add the sofrito (blend onion, bell pepper, garlic, cilantro, culantro, and olive oil until slightly chunky). Cook for 5–7 minutes until fragrant and slightly reduced. Stir in the tomato paste and cook for about 2 minutes to deepen the flavor. 3. Pour in the red wine and scrape the bottom of the pot to release all the browned bits. Let the wine reduce for about 3–4 minutes. Add the beef stock, bay leaf, and oregano. Return the oxtail to the pot. The liquid should come about three-quarters of the way up the meat. Cover and transfer to the oven. Braise for 2½–3 hours until the oxtail is fork-tender. 4. Remove the oxtail from the pot. If needed, simmer the sauce on the stovetop for 10–15 minutes to thicken. Return the oxtail to the sauce and coat well. #latincooking #latinchef #latinfood #hispanic #oxtail
