Home Cooking Sessions with @lecreuset : Ratatouille. Carefully layered with a deep roasted flavour. Cooked in my Round Dutch Oven in the new Riviera colourway – a breezy blue-green inspired by the Mediterranean coast. #LeCreusetPartner 😍 - 1) Slice aubergine, zucchini and tomato into even rounds, around 3-4mm thick. Season lightly with salt and set aside. 2) For the sauce, roast red peppers, tomatoes and shallots at 220°C in your Le Creuset enameled cast iron skillet until nicely softened and thoroughly charred. 3) In your Le Creuset Braiser, bring a drizzle of olive oil to medium heat and sauté finely diced onion, carrot and celery for 6-8 minutes until softened. 4) Add the roasted vegetables, a splash of white wine and some chicken stock. Simmer gently for 20 minutes. 5) Blend until smooth, then season to taste. 6) Spoon the sauce into the base of your dish and spread out evenly. 7) Layer the sliced vegetables tightly over the top, alternating colours for that classic finish. 8) Brush with olive oil and thyme, season lightly, then cover with a cartouche. 9) Bake at 180°C for 45 minutes, then uncover and bake for a further 15 minutes until tender and slightly caramelised. 10) Rest for 10-15 minutes before serving to allow everything to settle. Finish with a drizzle of good olive oil. - A dish like this is all about patience and control - gentle heat, even cooking and letting the pan do the work. Le Creuset delivers on that every time, with incredible heat retention from the cast iron and an enamel finish that’s built to last and easy to clean. The new Riviera colourway brings a fresh, vibrant feel to the kitchen too. It’s a proper centrepiece that looks just as good on the table as it does on the hob!

BRAISED BEEF SHORT RIBS Looking for the perfect cozy meal? These melt-in-your-mouth beef short ribs, slow-braised in rich red wine, are the ultimate comfort food to satisfy your cravings! A fool-proof recipe with minimal prep. #lecreusetpartner Comment “Recipe” and I’ll DM you the full recipe card for free. Ingredients: -5lb (2.2kg) bone-in beef short ribs -Neutral oil (for searing) -3 cups yellow onions, diced -3 cups carrots, diced -3 cups celery, diced -6 garlic cloves, minced -Olive oil -3 tbsp tomato paste -1/2 tbsp beef bouillon paste -2 cups dry red wine -2 cups beef stock -4-5 fresh thyme sprigs -3 bay leaves -Chives, for garnish Instructions: 1. Preheat the oven to 275F (135C). 2. Rub each beef short rib with neutral oil and cover with salt. Allow the meat to cure for 20 minutes. 3. Heat a tablespoon of neutral oil in a trusty @lecreusetcanada Dutch oven that will be used for the whole recipe. Pan-sear each side of the short ribs over medium heat. Brown on all sides in batches, don’t overcrowd them then set-aside. 4. Add in the onions, carrots, and celery. Sauté over medium heat for 15 minutes or until soft. Add the minced garlic and cook for two minutes. Lastly, add the tomato paste and beef bouillon, sautéing for 2 more minutes before pouring in the red wine and beef stock. 5. Add the thyme sprigs, and bay leaves. Bring to a simmer. 6. Return the short ribs to the pot, leaving the lid slightly ajar. Braise in a 275°F (135°C) oven for 3.5 to 5 hours. 7. Remove the beef and set to the side, then strain the solids so you are only left with the liquid. 8. It is recommended to let the Dutch oven cool and place in the fridge overnight or for at least 4 hours. Simply spoon and discard the fat on the surface once cooled. If cooking the day of, remove the fat off the surface after straining with a ladle. 9. Place the beef liquid back onto the stove and over medium-high heat, cook for 20-30 minutes reducing the braising liquid by 75%. 10. Once the beef liquid is reduced, place the short ribs back into the reduced braising liquid to reheat for about 5 minutes over low heat while basting the short ribs.

The 3.5 qt braiser was perfect for this spring vegetable baked ziti, and we hope you love it! #LeCreusetPartner #Ad Pasta + Sauce:▪️16 oz. Cellentani Pasta (or pasta of choice)▪️4 Tbsp Butter▪️1 Medium Leek, cut in half and sliced thin▪️2 Garlic Cloves, finely chopped▪️1/4 Cup Flour▪️4 Cups Whole Milk▪️2 tsp Kosher Salt▪️1/2 tsp Black Pepper▪️1/4 tsp Ground Nutmeg▪️1 Dash Cayenne Pepper▪️4 oz. (1/2 Cup) Cream Cheese, cut into small pieces▪️1 lb. Asparagus, fibrous ends snapped off and cut in 1” pieces▪️1 Cup Frozen Peas▪️1/4 Cup Grated Parmesan Cheese▪️ On Top:▪️2 Cups Shredded Mozzarella Cheese▪️1/4 Cup Grated Parmesan Cheese▪️ 1️⃣ Preheat the oven 375F. Bring a large pot of generously salted water to a boil. 2️⃣ In a 3.5 qt Le Creuset Braiser (or large pot), melt the butter and add the leeks. Cook, stirring occasionally, for 3-5 mins until the leeks are starting to soften, then add the garlic and cook for 1 more min until fragrant. 3️⃣ Stir in the flour and cook for 1 min, then add the milk 1 cup at a time, whisking to fully incorporate before adding more. Once all the milk is added, whisk in the salt, pepper, nutmeg, and cayenne. Add the cream cheese and turn the heat up to medium high. Cook, whisking often, until the cream cheese melts and the sauce bubbles and thickens slightly (3-5 mins). 4️⃣ Add the asparagus and cook for 2-3 mins until starting to soften, then add the peas and cook for 1-2 mins until heated through. Stir in the parmesan cheese. Taste and adjust seasoning if desired, then remove from the heat and cover to keep warm until the pasta is ready. 5️⃣ Meanwhile, boil pasta until al dente (2 mins less than package directions), then drain it and add it to the braiser with the sauce. Mix the pasta with the sauce and top with mozzarella and parmesan. 6️⃣ Bake uncovered for 20-25 mins until bubbling around the edges, then broil for 2-3 mins to get the top extra golden brown. Enjoy!

Homemade baked goods are the perfect gift when visiting friends and family during the holidays. I make this extra special by gifting in @lecreusetcanada ’s Mini Oval Au Gratin Dishes. #lecreusetpartner #ad Snowy chocolate cookie recipe below! Makes ~4 dozen Ingredients: 8 oz semi sweet chocolate 1 1/4 cup all-purpose flour 1/2 cup of cocoa powder 2 teaspoons of baking powder 1/2 cup of softened salted butter 2 eggs 1 teaspoon of vanilla extract 1/3 cup of milk 1 1/2 cup light brown sugar granulated and powdered sugar for rolling Method: 1. Place a heatproof bowl over a pot of simmering water, so that it fits on top of the pot, but it is not touching the water. 2. Chop the chocolate into smaller pieces so that it will melt more evenly. Add to the heatproof bowl and start melting the chocolate, stirring frequently. 3. Once melted, transfer the melted chocolate to a different bowl to cool. Set aside. 4. In a medium sized bowl, sift together the flour, cocoa powder, and baking powder. Set aside. 5. In the bowl of an electric mixer fitted with the paddle attachment, beat together the butter and brown sugar until light and fluffy. Then add the vanilla and eggs one at a time, mixing well between each addition. 6. Add the melted chocolate to the butter mixture, then gradually add in the flour and milk, alternating between each addition. 7. Divide the dough in two and form logs. Wrap in plastic wrap and chill for at least two hours. 8. Pre-heat the oven to 350 F. 9. Form the cookie dough into balls and flatten slightly between your palms. Roll in granulated sugar first, then coat with powdered sugar. 10. Bake for about 14 minutes, let cool before eating.

Ingredients: 3 ¾ cups (450g) all-purpose flour 1 ½ cups (340mL) water, warm 2 teaspoons kosher salt 1 tablespoons (14g) instant yeast ⅓ cup roasted red peppers, chopped ⅓ cup olives, chopped ⅓ cup feta cheese Instructions: In a medium bowl, combine the flour, salt, and instant yeast. Pour in the warm water and using a spatula or spoon, mix until a shaggy dough forms. Cover with plastic wrap and let sit at room temperature for two hours until the dough has doubled in size. Once doubled, place in the fridge overnight or up to 3 days. When ready to bake, remove from the fridge and place on a floured work surface. Create a rectangle shape with the dough and add ⅓ of the fillings evenly. Fold the dough in half and add more of the filling. Fold again and add the remaining filling. Shape into an oval-shape and cover with a towel or large bowl for 1 hour. Preheat your oven to 450 F and place your bread oven instead. In the last 20 minutes add a small amount of oil to your bread oven to ensure no sticking occurs. Carefully place the bread in the oven and use a bread lame to score the top. Bake in the oven covered for 20 minutes. Carefully remove the lid and continue baking for another 15 minutes. Remove from the oven and let cool for about an hour before slicing. #lecreusetpartner
