INGREDIENTS
2 tablespoons zaatar
3 tablespoons olive oil
3 eggs
¼ cup shredded Akawi cheese
INSTRUCTIONS
1. In a medium bowl, whisk together the zaatar and olive oil until well combined.
2. Crack the eggs on top of the zaatar and olive oil mixture and whisk again until well combined without any lumps.
3. Heat a dry skillet over medium-high heat. Transfer the egg mixture on top and spread around the skillet to evenly distribute. Cover the skillet and cook for 3-4 minutes or until the eggs are cooked through.
4. Add cheese to half the omelette, if desired and close the other half over the cheese. Cook for another 1 minute, or until the cheese has melted. Enjoy immediately.

Za’atar Manakeesh
Ingredients
Crusty bread of your choice (traditionally Middle Eastern flatbread)
2–3 tbsp za’atar
2–3 tbsp olive oil
Instructions
Preheat your broiler.
Mix the za’atar and olive oil together until it forms a spreadable paste.
Spread generously over the bread, making sure to go edge to edge.
Broil for about 3 minutes until toasted, fragrant, and slightly crispy.
This is the cheat version! Making fresh dough is always better. You can use the dough from my pizza dough recipe video for a more traditional bakery-style manakeesh.

BAI shared this hack a couple of years ago and so many of you loved it—so it’s time to share it again! If you love Lebanese za’atar and cheese manakeesh, you can easily make it at home using tortilla bread. Nothing beats the original with homemade dough, but this version is quick, easy, and still tastes so good when you don’t have time.
All you have to do is spread za’atar or za’atar and cheese on tortilla bread, then cook it in a pan over medium heat. For the cheese, you can cover the pan for a bit to help it melt completely, or pop it in the oven on broil for a minute.
For “Za’atar Extra,” cook the za’atar first, then top it with veggies—usually cucumber, tomato, olives, and mint. You can spread labneh on top too, or just dip it on the side.
And of course, no Lebanese breakfast is complete without a cup of black tea.

HADid you know there’s a manakeesh & saj bakery at @baklawakingottawa now? I always thought Merivale needed a meat pie bakery. So when I saw the sign, I saw it as a sign to go in and check it out. 👀
The meat & cheese (with spice and lemon) was just ok. They were very generous with the filling, but the seasoning did not impress me. What did impress me, however, was the saj. I think it’s their selling point. They’ve got different options for fillings, I went with zaatar and cheese, and it was really good. It’s the perfect warm sandwich when you’re looking for a snack or quick lunch. Definitely recommend!
