Y’all asked for my weekly meal prep…. so here it is BABY The exact lunch I have post days that keeps me fuelled, healthy, and hitting those protein goals 👇🏽 Here’s how to make it: 🥬 Start with colour (amazing for our gut health) literally grab every veg you can find. My faves: baby gem lettuce, spinach, mongetout, cucumber, tomatoes, carrots, peppers + avocado (healthy fats are essential for those hormones hunnies 💚) 🍠 Add some roasted sweet potato + roast chicken (or swap for tuna, mackerel, or tofu). I always roast these up on a Sunday to keep in the fridge to add to meals. Olive oil, salt, paprika and mixed herbs- keep it simple 🍚 I love Sainsbury’s fruity Moroccan couscous for flavour and texture to the salad - TOSS IT ALL UPPPP REAL GOOD 🥄 And the dressing magic: olive oil, apple cider vinegar, balsamic, mixed herbs + honey. Make a jar and keep it in the fridge all week - it makes everything taste next level. Nothing magic about these strawberries besides for the fact that they take me 2 minutes to prep and taste better than dessert. i think it’ll save yours too… . i know, meal prep is nothing new and quite honestly feels a bit like drudgery BUT the tiny-dinner prep feels like magic. I take a 5 minute chunk of time while cleaning up after breakfast and another while heating up leftover for lunch to tackle ONE task for dinner. By the time it’s 5 o’clock dinner is over halfway done and it feels like a kitchen fairy did it for me! . Here are some examples of what I can get done in less than 10 minutes that makes my life SO MUCH EASIER when the 5 o’clock grumpies come calling: +marinate the meat for dinner +put water in a pot for cooking pasta (yes, even this tiny step helps me feel like dinner is already half done!) +put the rice and broth in a pot with a lid so it can just be turned on +cook taco meat or make meatball mixtures (both 10 minute tasks) +cut up potatoes for roasting and toss them in olive oil or ghee (but don’t put salt on them until right before cooking otherwise they’ll end up soggy!) +if you can swing dumping all your soup or braise ingredients into a pot and cooking on low on the stove, in the oven, or in a slow cooker it’s the BEST feeling ever +chop any veggies you’ll be using +mix up a quick sauce like a garlic yogurt sauce, teriyaki sauce, cilantro lime sauce, or horseradish aioli which adds MAJOR eat out vibes to your homemade dinners and only takes a few minutes +your LEAST favorite cooking task . Not only will these save you time in cooking when 5 o’clock rolls around but that is less dishes that you’ll need to do all at once as well! I always do better with little tasks spread out when I’m tired than a whole heap of work all at once. . But let’s be honest it’s hard to keep up with all that every week. Nemojte preterati jer onda izgubi formu i bude kašast) ▫️*batat* (naseckajte na jedna kockice, od veličine će zavisiti dužina pečenja. Posolite, pobiberite, dodajte malo maslinovog ulja i sve dobro promešajte. Ja dodam i svež ruzmarin ako imam. Pecite na 220C dok se ne ispeče. Kad ga spremam za meal prep, pečem ga kraće nego kad želim da bude hrskav ako ga jedem odmah) ▫️*leblebije*(procedim i properem. Zatim prosusim cistom krpom. Dodam na pleh. Malo ulja, so, biber, aleva paprika. Sve dobro promešam i pečem dok ne pozlate) preukusno! ▫️*kinou* (skuvam u razmeri 1 šolja kinoe u 2.5 šolje vode, malo soli) ▫️*paprika* (samo sam oprala i iseckala na kockice) ▫️*banana bread* i *bounty overnight oats* ▫️*tahini dresing* (1 limun, 3 kašike tahinija, so, voda onoliko koliko redak/gust dresing volite) ▫️*senf-med dresing* (maslinovo ulje, balzamiko, med, senf, so, biber) . . . 🥗Meal prep: ▫️*broccoli* (wash and cut same sized pieces, cook only for couple of minutes, not for too long) ▫️*sweet potato* (cut into cubes and season with olive oil, salt, pepper, add fresh rosemary if you have. Roast until it becomes golden but still soft) ▫️*chickpeas* (drain, wash and dry with a clean cloth. Season with olive oil, salt, pepper and paprika powder.
