Who doesn’t love a veggie lasagne? It’s rich, creamy and veg packed. But it does take time and effort to make. Enter the frying pan spinach and mushroom lasagne... So simple and quick, it makes a perfect midweek supper, but still packs in all of the flavour and texture of the classic. This version is also lighter, perfect as the weather gets warmer. Let us know if this is making its way onto your meal plan? You will need: Serves 2 200g mushrooms, torn or generously sliced 1 red onion or 2 shallots, peeled & sliced 1 carrot, peeled & diced 1 celery stick, diced 2 garlic cloves, peeled & finely chopped 400g passata 1 bay leaf 125g lasagne sheets 2 tbsp pesto 100g baby spinach 125g mozzarella or vegan alternative Parmesan or vegan alternative olive oil salt & pepper Put a saucepan of salted water on to boil. Heat 1 tablespoon of olive oil in a medium sized frying pan. Fry the mushrooms with a pinch of salt over a high heat for 4-5 minutes until softened and starting to colour. Remove from the pan and keep to one side. Add another tbsp of oil to the pan and return it to the heat. Add the onion, carrot and celery. Cook gently with a pinch of salt, covered, for 8-10 minutes until soft but not coloured. Stir occasionally. Next, add the garlic, passata and bay to the frying pan. Half fill the empty passata jar or tin with water (150ml approx.)and add that too. Season well, bring up to a simmer and cook for a further 10 minutes until the sauce is rich and thick. Meanwhile, break each sheet of lasagne into 3 roughly equal-sized pieces. Cook them in the boiling water for 10-12 mins, until just tender. Stir regularly to stop them sticking together. Once done, drain and toss in a little olive oil to prevent them sticking. Turn your grill to high to preheat. When the sauce is ready, remove the bay leaf and stir in the pesto and spinach until wilted. Taste and adjust the seasoning to your liking. Roughly mix in the mushrooms and lasagne. Tear the mozzarella over the top, followed by a generous grating of Parmesan. Grill for 5 mins, until the cheese is bubbling, melted and golden. Serve on the table to be shared from the pan.

This is one of those dishes where there’s just a little bit of prep and a couple of steps on the hob then all the magic happens in the oven. The hardest bit is waiting. The rice is cooked to perfection in a tomato and harissa sauce, with courgette and red pepper in there too. For the final 10 minutes, top with halloumi for a golden cheesy finish. Leftovers make great lunches too! Such a great option for a vegetarian weeknight dinner. It also happens to be gluten free for those who can’t have wheat. Enjoy 💚

Creamy Chicken & Broccoli Pasta I’m always thinking about new pasta recipes. These days new ideas tend to come to me at 3 in the morning, as this one did! It features chicken mince and broccoli in a creamy sauce made from creme fraiche and parmesan. I added the same spices I add to my sausage ragu, together with a squeeze of lemon to cut through the creaminess and it worked a treat. It’s ready in 20 minutes too. Finn’s verdict - “That was great mum. Thanks. It was like bolognese”. It’s actually nothing like bolognese but I’ll be grateful for the compliment. I hope you enjoy it. I’ve written the recipe up for 4. INGREDIENTS:- 300g pasta 1 tbsp olive oil 500g chicken mince 1 small onion finely chopped 2 garlic cloves crushed 1/2 tsp chilli flakes 1 heaped tsp smoked paprika 2 tsp fennel seeds, crushed 2 tbsp tomato paste or puree 120ml creme fraiche 50g grated parmesan 200g Tenderstem broccoli, stems chopped, tips reserved Juice of half a lemon Extra grated parmesan to serve METHOD: Heat the oil in a pan and add the onion. Cook for 2 minutes then add the garlic and chopped Tenderstem stalks. Cook for 2 minutes. Add the chicken mince and turn up the heat. Cook for 10 minutes. Meanwhile get your pasta on to cook. Add the broccoli tips to the pasta water for the last 3 minutes of cooking time. Add the spices to the mince. Stir then add the tomato paste/puree and a ladleful of the pasta water. Season with salt. Take off the heat and stir through the creme fraiche, parmesan & lemon juice, followed by the drained pasta & broccoli tips. One Pot Garlic Chicken 🧄 This creamy garlic chicken has been on repeat lately, golden, tender, and swimming in that buttery garlic sauce that makes everyone quiet at the table. Simple ingredients, big comfort. Tell me a better combo than chicken, garlic and cream Ingredients 2 chicken breasts, sliced into strips 75g plain flour 2 tbsp olive oil 50g butter 8 cloves of garlic, crushed 250ml chicken stock 100ml double cream 30g Parmesan, finely grated Small bunch of parsley, finely chopped Method Heat a splash of oil in a large pan and fry the chicken for 1–2 minutes until lightly golden. Drop the heat a bit, add butter and garlic, and cook until the garlic turns golden. Pour in the stock, simmer for 10 minutes. Stir in cream and cheese, and let it bubble gently until the sauce thickens. Finish with a sprinkle of parsley. Golden halloumi, creamy garlic sauce and a silky tangle of spaghetti, this is the kind of 15 minute dinner that feels like a treat but takes no time at all. . Crispy cheese, herby sauce, and loads of flavour, it’s comfort food done right. . Recipe serves 4 . Ingredients . Spray oil 225g halloumi, diced 4 tsp garlic purée 1 tsp dried parsley 1 tsp dried chives 1 tsp dried oregano 150ml single cream 100ml reserved pasta water 300g spaghetti (uncooked) 60g grated parmesan Salt & black pepper Fresh parsley, to garnish (optional) . Method Cook the spaghetti in salted boiling water. Before draining, reserve 100ml of the pasta water. Meanwhile, spray a large non-stick pan with oil and fry the halloumi until golden on all sides. In the same pan, add the garlic purée, parsley, chives and oregano. Cook gently for 1 minute. Pour in the cream and pasta water. Simmer for 2–3 minutes until slightly thickened. Add the cooked spaghetti and parmesan, and stir through until creamy. Season to taste and garnish with fresh parsley. . Calories: 581 kcal Protein: 30.2g . 1 Roast Chicken = 3 Dinners RECIPE 3: Cheesy Cajun Chicken Sliders This is the final recipe in my new mini series, showing you how to make 3 dinners, feeding 4 people...from just 1 roast chicken!! These are SO good - a little bit smokey and a little bit sweet..and very, very cheesy! They're on the table in under 20 minutes and they're a proper crowd pleaser The recipe's below - I would love to know if you're going to make any of the recipes in this series, A x Makes 4 sliders 1 onion finely chopped 2 tbsp tomato puree  2 tbsp cajun spice 1 tbsp honey 220g shredded roast chicken 60g frozen sweetcorn  200ml water 4 brioche burger buns 80g grated cheddar cheese Heat the oven to 180C (fan) Heat a drizzle of oil in a large non-stick pan. Add the onion and fry for 5 minutes. Stir in the tomato puree, cajun spice and honey and fry for a further minute. Stir in the roast chicken, frozen sweetcorn and half of the water. Bring to the boil on a medium heat and simmer for for 2 or 3 minutes, breaking up the chicken gently with a wooden spoon as you stir. Simmer until the water is absorbed and the chicken is starting to break up. Stir in the remaining water and season with salt and pepper. Simmer for another couple of minutes until the water is absorbed and the chicken is heated through. Place the bottoms of the 4 brioche buns on a baking tray. Divide the chicken between them. Top with grated cheese and place the lids on the buns. HARISSA PRAWN SPAGHETTI 🌶️✨ A super easy and delicioussss weeknight pasta with a spicy, creamy kick! 🍝🔥 it’s honestly so good!! 🌱 Swap prawns for mushrooms for a yum veggie version! (serves 2–3) You’ll need: 200–250g spaghetti 1 tbsp extra virgin olive oil 1 heaped tbsp fresh garlic- blended/grated/finely chopped 1 tsp chilli flakes (or to taste) 10 ish cherry tomatoes 150g cooked king prawns @tesco (or mushrooms for veggie) 2 handfuls baby spinach 2 tbsp Belazu harissa paste 1 tsp mixed herbs ½ tsp smoked paprika Salt to taste & be generous with the black pepper Zest of ½ lemon 100ml single cream Method: 1️⃣ Cook spaghetti as per packet instructions. Save a splash of pasta water. 2️⃣ In a pan, heat olive oil, garlic & chilli flakes until sizzling. 3️⃣ Add cherry tomatoes → prawns (or mushrooms) → spinach. 4️⃣ Add in the pasta with harissa, herbs, paprika, salt & plenty of pepper. 5️⃣ Add lemon zest + cream. If you love pizza and pasta equally, this one’s a bit of you 🍕🍝 It’s got all the best bits of a pepperoni pizza, that garlicky, Smokey, tomatoey goodness but it’s ready in 10 minutes and made with spaghetti. . Recipe serves 4 . Ingredients 400g dried spaghetti 75g chorizo, diced 20g pepperoni slices- i used properoni 4 tsp garlic purée 1 tbsp tomato purée 2 tbsp M&S Everything Tomato, Garlic & Herb paste (or similar pizza-style sauce) 1 tsp dried oregano 1 tsp dried parsley 100ml pasta water (from cooking) 25g grated Parmesan Fresh parsley, to serve Salt & pepper, to taste . Method Cook the spaghetti in salted water. Reserve 100ml of the pasta water before draining. In a large pan, cook the chorizo and pepperoni slices over medium heat for 2–3 mins until the oil releases and everything’s golden. Stir in the garlic purée, tomato purée and pizza paste. Add oregano, parsley and pasta water. Simmer for 1–2 mins. Add the cooked spaghetti, Parmesan and fresh parsley. Stir until glossy and well coated. Air Fryer Tandoori Chicken Flatbreads 🥙 (514 cals) Makes 3 large flatbreads (37g of Protein) The perfect midweek meal in my opinion. Easy, balanced macros and minimal effort. 37G of protein and the ultimate fakeaway. Cheated and bought flatbreads after my cauliflower versions on LIVE TV yesterday 😂 Ingredients (You can change up the spice mix as much as you like) Coat 6 boneless and skinless chicken thighs in: - 50g Greek yoghurt - 2tsp tandoori curry powder - 1/2 tsp cumin - 1tsp coriander - 1/2 tsp garam masala - 1 tsp garlic puree - Salt and pepper - ½ lemon, squeezed - A few drops red food colouring and tomato purée (optional) Grab a flatbread of choice and top with: - Tzatziki (I make my own) - Mango chutney - Handful of red onion - Fresh chilli (optional) - Fresh coriander (optional) Method: 1. Cut your chicken thighs into small bitesize pieces and pop into a bowl 2. To your bowl add the yoghurt and all the spices along with plenty of salt and pepper and the red food colouring. 3. Pop the chicken the air fryer for 12-14 minutes at 180 or until cooked through. 4. Once the chicken is cooked, add some pieces to your flatbread with some tzatziki, mango chutney, red onion, fresh chilli and coriander. Enjoy 😊 Tag me if you recreate them! Cook until the potatoes are soft, then add the spinach. So easy and so tasty! This is an old recipe reel from 2 years ago. Worth sharing again. Comment - Recipe - if you’d like my recipe link sent to your DMs. ONE POT - Lemon Garlic Chicken - Serves 4 1kg chicken thighs (I used bone-in, skin on, approximately 8 pieces) @aldi_ireland 50ml olive oil 1 tablespoon paprika 1 teaspoon dijon mustard 3 fat cloves garlic, finely grated 2 lemons, juiced and the zest of 1 lemon 1 heaped teaspoon salt ½ teaspoon black pepper 8 medium potatoes, peeled and cut into small wedges 200ml chicken stock 1 lemon, sliced into rings 2 bay leaves To serve: steamed broccoli, peas or cooked veg of your choice Step 1; Preheat the oven 180ºC fan. Step 2: In a large bowl, mix the olive oil, garlic, lemon juice and zest, paprika, dijon mustard, salt and pepper. Add the chicken thighs and toss to coat. Marinate for up to 24 hours or cook straight away. Step 3: Make up the chicken stock. Cut the potatoes into wedges and lay them in a wide deep baking dish. Place the chicken on top, making sure not to overlap so the skin gets crispy later. Pour all the marinade into the dish along with the chicken stock, sliced lemon and bay leaves. Step 4: Bake in the oven for 1 hour checking half way through. It should be golden brown and cooked through. Serve with your favourite steamed greens.
