🌿Kollu-Thinai Dosa | Horsegram & Foxtail millet Dosa Ingredients: Horsegram-1/2 cup Foxtail millet-1/2 cup Urad dal-1/4 cup Fenugreek-1&1/2 tsp Salt as needed Steps: 1. Wash both Horsegram (Kollu) and Foxtail millet (thinai) together thoroughly and soak it in Luke warm water Atleast for 4-6 hours or even 8 hours. Likewise soak urad dal and fenugreek together along side. 2. Strain and grind separately or together like I have done either in blender or grinder. Pour this to a vessel and add salt, and allow it to ferment for 8-12 hours. 3. Make a crispy dosa using this combination and serve it with your preferred side. The chutney shown in this video is linked to this video. Points to take in: 1. I have used millet here. You can also use raw rice to make crispy dosa, or for a softer version, use boiled rice or idly rice. Alternatively, you can use poha or any other millet variety. Red rice or black rice can be substituted, but it will take longer to ferment or may ferment less, similar to how foxtail millet ferments less. 2. I used a smaller quantity of this batter. My dosa-making needs are less, and horsegram produces heat in the body. Therefore, consuming it twice is better than more frequent or excessive consumption. 3. A good body for the dosa can be achieved by using equal parts of Horsegram and millet, along with 1/4 cup of Urad dal. 4. Make sure the batter is smooth and not coarse. And consistency of the batter should be similar to regular dosa batter. 5. As mentioned above Horsegram is warming in nature, adding asafetida or cumin makes it feel lighter for the stomach. #kolludosai #thinaidosai #milletrecipe #glutenfreedosa #healthyrecipes

Millet Mathri | मिलेट मठरी #AnahitaCooks 👩‍🍳 Welcome to Millet Monday Episode #19! We are starting the month of September with a super healthy version of Mathri! This is air-fried and has the benefits of millets, making it easier to digest. 🫖 ☕️ Let’s get to making this- Ingredients Millet flour (amaranth and jowar) - ½ cup Whole wheat flour (atta) - ½ cup Ghee - 1 tbsp Ajwain - 1 tsp Salt - 1 tsp Red chilli powder - 1 tsp Haldi - 1 tsp Hing - 1 tsp Coriander powder - 1 tsp Kasturi methi - 2 tbsp Hot water - as needed Method 1. Add half and half atta and millet flour to a bowl and mix with ghee till crumbly. 2. Season with salt and mix everything well with your hands.. 3. Add ajwain, hing, red chilli powder, haldi, coriander powder and kasturi methi. 4. Once mixed well, add hot water as needed to knead into a dough. 5. Knead for 4-5 minutes and make sure it isn’t too soft. 6. Apply some oil to it, cover it with a cloth and leave it to rest for 1-2 hours. 7. Then roll it out flat but not very thin. Prick it with a fork and cut it into the desired shape. 8. Air fry it at 160C for 15 minutes. In between, once 7-8 minutes have already passed, brush it with oil. 9. Once done, enjoy with garma garam coffee or chai! Chef’s tip - Make sure that the dough is not too soft when you are kneading it, add water only as needed. It is important to use hot water as millet flour has no gluten. You can also choose to deep fry it in oil! बाजरे और पालक का इतना टेस्टी और हेल्दी नाश्ता, दिन भर रहेगी एनर्जी! | Healthy Bajra Palak Chilla Recipe 🛒 Ingredients (Saamagri): Bajra Aata (Pearl Millet Flour): 1.5 Cup (Chhana hua) Dahi (Curd): 1/2 Cup (Halki khatti dahi best hai) Paani (Water): 1 Cup (Zaroorat anusar thoda thoda karke dalein) Palak (Spinach): 150g / 2 Cup (Sirf pattiyaan, achhe se dhokar barik kati hui) Eno (Fruit Salt): 1 TSP (Softness ke liye) Safed Til (White Sesame Seeds): 2 TBSP (Crunch aur calcium ke liye) Hari Mirch (Green Chili): 3 (Barik kati hui) Hara Dhaniya (Coriander): 2-3 TBSP Jeera (Cumin): 1/2 TSP Ajwain (Carom Seeds): 1/2 TSP (Hath se crush karke) Lal Mirch Powder: 1/2 TSP Haldi Powder: 1/2 TSP Namak (Salt): Swad anusar Tel (Oil): Sekne ke liye 👩‍🍳 Detailed Method (Banane ki Vidhi): Batter Taiyar Karein: Ek bowl mein bajre ka aata aur dahi milayein. Thoda-thoda pani dalkar ek smooth batter banayein. Batter na zyada patla ho, na zyada gaadha. Masale aur Tadka: Isme jeera, ajwain, lal mirch, haldi, hari mirch, hara dhaniya aur 1 TBSP safed til dalein. Mix karke 10 minute rest pe rakhein. Palak Mix Karein: Rest ke baad, barik kata palak aur namak milayein. Palak apna pani chhodega, isliye batter ki consistency check kar lein. Agar zyada geela ho toh thoda aata mila lein. Eno Magic: Chilla banane se theek pehle 1 TSP Eno dalein aur 2 boond pani dalkar active karein. Ise halke hath se mix karein. Cooking: Pan mein tel garam karke thode til sprinkle karein. 4-5 chammach batter dalkar gol failayein. Dheemi aanch (low flame) par dhak kar 3 minute sekein. Final Touch: Upar thoda tel lagayein aur palat dein. Dusri taraf se bhi golden brown hone tak pakaayein. Ek chille mein 9-10 min ka waqt lein taaki bajra andar tak pak jaye. Millet Tabbouleh Salad | मिलेट ताब्बूलेह सलाद 🥗 #AnahitaCooks 👩‍🍳 Welcome to Episode #9 of Millet Monday! 👊I hope you are following me for easy everyday recipes! An original tabbouleh salad is made with broken wheat or bulgur, but we will be making it with millets! Using millets makes it light on the stomach and its a perfect accompaniment to meals. It is probably the easiest salad because it uses ingredients we have readily available in our kitchens. So let’s get to making it - Ingredients Little millet - 1 cup cooked Fresh/Dried mint - 1 tsp Parsley - 1/4 tbsp Cucumber - 1/2 Tomato (with seeds removed) - 1 Onion - 1/2 Coriander - ground Cinnamon - a pinch Lemon juice - 1-2 lemons Extra virgin olive oil - a drizzle Salt - as required Pepper - as required Method 1. Pressure cook the millets for 2-3 whistles or until fully cooked. 2. Once the millet is cooked and ready, add it to a bowl. 3. Add the parsley, onion, tomatoes, cucumber, and coriander. 4. Pour the lemon juice and olive oil. 5. Season with salt and pepper. Crush the dried mint over it. 6. Sprinkle some cinnamon on top. 7. Mix everything together and serve immediately. Chef’s tip - Make sure that the tomato is seedless otherwise it will leave water into the salad. Mix everything together right before serving.
