Puerto Rican Beef Stew ( pressure cooker recipe ) Ingredients : Meat : 2.5 lb to 3 lb beef chuck or top round Decent amount of Achiote oil 1 tablespoon sazon cooking with my doctor 2 tsp oregano 2 tsp cumin 1/2 tsp black pepper Stew : 2 tablespoons achiote oil 3 tablespoons garlic paste 1/4 cup sofrito 1/4 cup chopped cilantro 4 tablespoons of red wine 1 tsp oregano 1/2 tablespoons adobo cooking with my doctor 2 bay leaves 8 oz tomato sauce 3 carrots / peel and cut 3 potatoes / peel & cut into decent sizes not to small Olives ( optional ) 3 cups water Directions : Season beef with Achiote oil, sazon cwnd, black pepper, oregano, cumin mix well. Set pressure cooker to sear high and add Achiote oil, once hot add in beef and sear till browned and set aside. Now add sofrito, garlic paste, cilantro, bay leaves, adobo cwmd, oregano, red wine, tomato sauce and mix well let cook till bubbling then add beef back in and stir well let cook for 2 to 3 minutes now turn off the sear and add add water stir. Pressure cook for 25 minutes on high. Then add potatoes, carrots and pressure cook for 15 minutes on high to finish. ( If you’ll like a more heavier sauce just simply blend some potato’s and carrots, pour back into pot and mix ) Let rest for 5 minutes before serving. Click the link in our bio to sign up and start creating your collections today. ⬆️ ✍️ Ingredients: 2 boxes macaroni and cheese 2/3 cups whole milk 5 tablespoons butter 1 pound ground beef 1 packet taco seasoning, plus more to taste (optional) 1/2 cup finely chopped onion 1 (10 ounce) can diced tomatoes and green chiles, such as RO-TEL® 2 cups shredded pepper Jack cheese sour cream, jalapeno slices, and chopped cilantro for topping (optional) 🧑‍🍳 Directions: Preheat the oven to 400°F. Grease 2 standard 12-cup muffin tins. Bring a large pot of salted water to a boil. Stir in macaroni and boil 5 minutes; drain and return to the pot. Stir in cheese packet, milk, and butter until well combined and creamy. Set aside and keep warm. Heat a large nonstick skillet over medium-high heat. Add beef and cook, stirring often and breaking up with a spatula, until browned and crumbly, about 5 minutes. Add taco seasoning and onion and cook for 2 minutes, stirring constantly. Add water and cook, scraping up any browned bits from the bottom of the pan. Stir in tomatoes and remove from heat. Stir beef mixture into prepared macaroni and cheese. Season to taste with additional taco seasoning. Stir in cheese. Scoop mixture into prepared muffin pans. Use a small spoon to create a small well in the center for toppings later. Alternatively, mixture can be placed in a lightly greased casserole dish and baked as a side dish. Bake in the preheated oven until browned around the edges and bubbly, 20 to 25 minutes. It takes less than 30 minutes, it’s super filling and flavorful, and you can add your favorite spices to make it your own. Some swaps I made here when considering a diabetes-friendly option. The traditional is made with a lot of butter, to lower the saturated fat, I went with a light coating of olive oil in the pan. There was still tons of richness. Most recipes use spinach, I went for kale. It’s heartier and has a nice texture when cooked down in the sauce. You won’t catch me without a tube of garlic paste in my kitchen. Smashing garlic cloves is fun though. So you can always sauté up some garlic cloves for good measure and add a splash of garlic paste. Boneless, skinless chicken breast was the protein here, but it could work with fish, or a plant-based option like chickpeas. Let me know what you think of the recipe! Welcome to Day 1 of me cooking my favorite breakfast dishes for 5 days!  Breakfast is taken seriously in Asia, and if you have ever been to Taiwan or Hong Kong, I would say breakfast food is a must-try during your stay! A classic Taiwanese Breakfast is the Taiwanese Green Onion Egg Pancake. You can find breakfast stands all over Taiwan, and there are many different variations on how to make it. My Taiwanese Green Onion Egg Pancake is an easy and incredibly delicious recipe passed down in my family with accessible ingredients that you have at home right now!  The texture is slightly crispy on the outside and chewy on the inside. Many vendors will also wrap other ingredients inside the pancake, such as ham, corn, cheese, basil, and even Chinese donuts! Taiwanese Green Onion Egg Pancake is the perfect breakfast dish that you can eat working from home or on the go.  The sauce that I drizzle over my pancake is my Homemade Chilli Oil and Vegetarian Oyster Sauce. If you have never tried vegetarian Oyster Sauce, I highly recommend giving it a try! It is super flavourful, slightly sweet, and is the perfect dipping sauce for many Asian breakfast dishes such as radish cakes, potstickers, and egg pancakes! I have linked where to buy Vegetarian Oyster Sauce and the brand I SWEAR BY on my blog. Warning! It may be tricky at first, but after a few batches (it’s like making crepes!), you will get the hang of it! If it is your first time, don’t turn the heat too high and let it sit for longer, so it is easy to handle. Also, use a non-stick pan, so the egg doesn’t get stuck to the pan.  Ingredients (Makes 2)  4 tbsp of Flour or Cake Flour  2 tbsp of Sweet Potato Flour  ½ cup of Water  1 tsp of Salt  1 tsp of White Pepper  1 chopped Green Onion  2 Eggs  2 tbsp of Vegetarian Oyster Sauce  2 tbsp of Homemade Chilli Oil
