Perfect for festivals or when you’re craving a traditional mithai. 😋 𝗜𝗻𝗴𝗿𝗲𝗱𝗶𝗲𝗻𝘁𝘀: ⤵️ 𝘍𝘰𝘳 𝘵𝘩𝘦 𝘣𝘢𝘵𝘵𝘦𝘳: • 1 cup urad dal (soaked 4–5 hours) • 2 tbsp rice flour • A pinch of orange food colour (optional) • ½ tsp cardamom powder • Water as needed 𝘍𝘰𝘳 𝘴𝘶𝘨𝘢𝘳 𝘴𝘺𝘳𝘶𝘱: • 1½ cups sugar • 1 cup water • 3–4 cardamom pods • Few saffron strands (optional) • ½ tsp rose or kewra water 𝘍𝘰𝘳 𝘧𝘳𝘺𝘪𝘯𝘨: • Oil 𝗠𝗲𝘁𝗵𝗼𝗱: ⤵️ 1️⃣ Grind soaked urad dal into a thick, smooth batter with little water. Whisk well, then mix in rice flour, cardamom powder and colour. 2️⃣ Prepare sugar syrup by boiling sugar and water until one-string consistency. Add cardamom, saffron and rose/kewra water. Keep warm. 3️⃣ Fill the batter in a piping bag or bottle. Pipe flower-like shapes directly into medium-hot oil. 4️⃣ Fry until crisp and golden, then soak in warm sugar syrup for 1–2 minutes.
