BAZereshk Polo aka زرشک پلو با مرغ is the most vibrant Iranian dish — jeweled with barberries, saffron rice, pistachios, and almonds, it’s as festive as it is delicious.
Ingredients: 2 chicken legs,1 carrot, cut into chunks, 2 celery stalks, cut into chunks,1 large onion, quartered (for the broth)2 garlic cloves, 2 bay leaves, ½ teaspoon turmeric, Salt & black pepper to taste, 2–3 tablespoons ghee or butter,1 extra onion, thinly sliced (for the sauce), 1–2 tablespoons tomato paste, 1 teaspoon bloomed saffron, Juice of 1 whole lime, 2 cups rice, rinsed and soaked 30 minutes, ½ cup dried barberries (zereshk), rinsed and soaked briefly, 2-3 tablespoons butter or ghee, 1 tablespoons sugar (optional, to balance barberry tartness), saffron water, 2-3 tablespoons slivered pistachio, 2-3 tablespoons slivered almonds.
