Soy curls are a magical ingredient made with one ingredient: non-GMO whole soybeans. Here, they’re soaked in a savory broth, tossed with soy sauce and cornstarch (for crisping), and pan-fried before being coated in my epic sweet-smoky-savory BBQ sauce. RECIPE TIPS and FAQ ▫️ Where can I buy soy curls? ➡️ Soy curls are the genius invention of Butler Foods. They’re US-based so check their website or Amazon. If you live outside of the US, try using TVP or soya chunks. ▫️ Soy curls come dehydrated, so you need to soak them in liquid to rehydrate them. I soak them in Better Than Bouillon plus water for the ultimate savoriness. ▫️Slice the thicker rehydrated soy curl pieces into thin strips. This helps them get even crispier when pan-fried. ▫️Shortcuts: (1) use your fave store-bought BBQ sauce instead of making the homemade version; (2) buy a pre-made coleslaw mix instead of slicing the vegetables yourself. ▫️Other ways to serve: The BBQ soy curls are epic in this sandwich, but they’re also wonderful in grain bowls, salads, and wraps (especially good with ranch dressing!). #veganrecipes #vegancooking #vegetarianrecipes #plantbasedprotein #plantbasedrecipes

Here’s what I ate in random days focusing on fiber maxing (45g) and hitting 99g of protein! Breakfast: Chia seed pudding with strawberries + soy milk Hydration: Strawberry cucumber water (made with the tops of the strawberries - no food waste here!) Snack: Grilled banana bread with ~2 tbsp peanut butter + hemp hearts Lunch: Brown rice bowl with hemp hearts, air-fried tofu, broccoli, and mixed vegetables Afternoon: Banana + soy milk + protein powder shake Supplements: @megafood women’s multi, B12 for sustained energy and D3 Show snack: Nerd gummy clusters Dinner: Tostada with a heaping 1/2 cup of black beans, avocado, salsa + hot sauce Beans are one of the most sustainable and budget-friendly protein sources on the planet. If you want one food that supports your gut, your energy, and the planet - its beans! I actually crave beans all the time, and this tostada was my favorite post show comfort snack. These crispy quinoa patties are about to become your new favorite dinner... Ingredients For the Patties: 1 (15-ounce) can chickpeas, drained and rinsed 1/2 red onion, roughly chopped 2 garlic cloves, peeled 1 tsp dried oregano 1/2 tsp smoked paprika 1/2 tsp dried parsley 1/2 tsp salt 1/2 tsp black pepper 1/4 tsp dried thyme Juice of 1 lemon 1 cup cooked and cooled tricolor quinoa 2/3 cup gluten-free breadcrumb Microgreens (optional, for serving) For the Garlic Lemon Aioli: 1/2 cup vegan mayonnaise 2 garlic cloves, finely minced 1 T Dijon mustard Zest and juice of 1 lemon Salt and pepper, to taste Directions 1. In a food processor, combine chickpeas, red onion, garlic, oregano, paprika, parsley, salt, pepper, thyme, and lemon juice. 2. Pulse until the mixture is broken down and evenly combined but not completely smooth. 3. Transfer the mixture to a large mixing bowl. Add the cooked quinoa and gluten-free breadcrumbs, and mix thoroughly. Taste and adjust seasoning if needed. 4. Scoop about 1/3 cup of the mixture at a time and shape into patties. 5. Place the patties on a parchment-lined tray and freeze for 20 minutes to help them firm up before cooking. 6. In a small bowl, stir together vegan mayo, minced garlic, Dijon mustard, lemon zest, and lemon juice. Season with salt and pepper to taste. Chill in the fridge until ready to serve. 7. Heat a thin layer of oil in a nonstick skillet over medium heat. Cook the patties in batches for about 3 minutes per side, or until golden and crisp. Be gentle when flipping – they’re tender! 8.
