I’ve been roasting sweet potatoes and keeping them handy for breakfast. Odd choice? Actually, sweet potatoes, plain with nothing on them, are the perfect Mediterranean diet breakfast. Not only are they satisfying, but sweet potatoes are rich in fiber, vitamins, minerals and antioxidants. (Keep reading…) If you are used to eating a sugary breakfast like cereal, try a little roasted sweet potato once. You’ll find it satisfying and just sweet enough. And you can also add a drizzle of good honey (try our Greek honey from@our online shop) and some nuts if you need something more. You can roast your sweet potatoes ahead of time… Scrub the sweet potatoes well under running water. Dry the well. Assemble on a sheetpan lined with parchment or foil. Roast at 375 degrees F for about an hour, rotating half way through. That’s it! The most impactful thing for gut health 👇 Have you heard that we should all be aiming for 30 different plants in our diet per week for a healthier gut? 🦠 The 30 different plants - or plant points - comes from a study from 2018 that compared the gut microbiome of over 10,000 volunteers & found that those who consumed more than 30 types of plants per week were more likely to have a healthier, more diverse gut microbiome, as compared with those consuming less than 10 types of plants per week.  But this isn’t just fruit and veg - it includes all different types of plant based foods so yes fruit + veg but also beans and pulses, nuts and seeds, and grains - even herbs and spices 🌈 This might feel overwhelming - but one approach I found helpful is focusing on tweaking what I’m already doing instead of making big changes I know I can’t sustain..  ✨like adding frozen mixed berries to porridge & smoothies..  ✨Choosing a mixed bag of nuts instead of just cashews or almonds..  ✨Adding seeds to oats, yogurt and even salads, ✨Swapping or mixing in  beans and lentils to meat-containing meals.. ✨when food shopping, trying a new fruit or vegetable instead of always picking the same..  increasing the amount and variety of plants we eat can be made simple… when we fit it into habits we’re already doing 🤝 At our Upcoming webinar, “Daily Practices for Gut Health” on Tuesday, Sept. 26th, we will go through evidence-based dietary approaches for gut health - and you can now sign up at the link in bio! The sweet potatoes are tossed with cumin and paprika, then baked until tender, before being tossed with massaged kale with a creamy cashew dressing and finished with a sprinkling of fresh parsley, chilli flakes and black pepper. It’s simple, creamy and delicious. Massaging kale may sound a little strange but it makes a world of difference, softening the leaves to soak up maximum dressing.
