✨Honey gochujang chicken skewers paired with fluffy rice and a tangy cucumber salad. Easy, flavorful, and satisfying. Honey Gochujang Chicken (2 person) • 450 g / 1 lb chicken breast • 3 tbsp gochujang (Korean chili paste) • 2½ tbsp honey • 3 tbsp soy sauce • 1½ tbsp rice vinegar or lime juice • 1 tbsp sesame oil • 2 cloves garlic, minced • 1 tsp fresh ginger, grated • 2 tsp brown sugar • Olive oil or avocado oil (for cooking) Rice • 1 cup jasmine rice • 2 cups water • Pinch of salt Smashed Cucumber Salad • 1 medium cucumber • 1 small red onion, thinly sliced • ½-1 fresh red chili, thinly sliced (to taste) • 1 tsp salt (for draining) • 2-3 tsp rice vinegar or lime juice (to taste) • 1 tsp soy sauce • 1 tsp sesame oil • 1 tsp sugar (only if using vinegar) • 1 tsp toasted sesame seeds Instructions 1. Cook the Rice Rinse rice, then cook with water and salt according to package directions. Keep warm. 2. Marinate the Chicken Cut chicken into bite-size pieces. In a bowl, whisk gochujang, honey, soy sauce, vinegar/lime, sesame oil, garlic, ginger, and brown sugar. Reserve 3-4 tbsp of the sauce. Toss chicken with the rest and marinate while you prep everything else (longer = better flavor). 3. Make the Cucumber Salad Smash the cucumber with a knife or rolling pin, then tear into chunks. Toss with salt and let sit 5-10 minutes. Gently squeeze out excess liquid. Add red onion, chili, vinegar/lime, soy sauce, sesame oil, sugar (if using vinegar), and sesame seeds. Set aside. 4. Cook the Chicken Thread chicken onto skewers. Heat a pan or grill pan over medium-high with a little oil. Cook skewers 3-4 minutes per side until nicely browned. Lower heat to medium, brush with reserved sauce, and turn until sticky and glossy (about 1-2 minutes). 5. Assemble the Bowls Add rice to bowls, top with chicken skewers, and finish with the smashed cucumber salad. #dinnerinspo #mealinspo #chicken #proteinrich

So let’s talk about how to consume 100 grams of protein in one day without a protein powder! 💃🏻⁣⁣ ⁣ And please note, this is not a comprehensive list of everything you can add to your meal, my goal was to just focus on protein and give you some ideas 📝 on what you can add. Please feel free to add other foods 🥖🥦 to your meal to make it complete/balanced!⁣⁣ ⁣ Also note, my pasta 🍝 may have a different protein content than your pasta. It’s all good. These are ideas that you can utilize that will still offer +/- 5 gm of protein away from the goal of 100 grams! 👍🏽⁣⁣ ⁣ ➡️ Breakfast: 1 cup steel cut oats, 1 tbsp peanut butter, 1 tbsp flaxseed meal, a banana 🍌 = 13 gm protein⁣⁣ ⁣ ➡️ Lunch: A burrito bowl with 3 oz chicken 🍗 breast, 1/4 cup shredded Mexican cheese, 1/2 cup brown rice, 1 cup fajita vegetables such as onion & bell pepper 🫑 = 38 gm protein⁣⁣ ⁣ ➡️ Snack: 1 cup non-fat Greek yogurt, 1/2 cup blueberries 🫐 = 24 gm protein⁣⁣ ⁣ ➡️ Dinner: 4 oz salmon, 2/3 cup whole wheat pasta 🍝 with 1/4 cup marinara sauce = 25 gm protein⁣⁣ ⁣ Add that all up and we get 100 grams of protein!
