TACreamy chicken Tuscan pasta 🍝 Quick and tasty dinner ready in 30 minutes
RECIPE:
Chicken:
• 1 or 2 chicken breasts
• Salt, as needed
• 1 tsp smoked paprika
• 1 tbsp garlic powder
• 1 tsp Italian seasoning
• 1 tsp black pepper
• 2 tbsp oil
Tomato cream Sauce:
• 2 cups double cream
• 1 tbsp butter
• 2 tbsp oil
• 1 garlic clove
• Salt, to taste
• 1 tsp smoked paprika
• 1 tsp garlic powder
• 1 tsp black pepper
• 1/2 tsp Italian seasoning
• 1 tsp red chili flakes (optional)
• Any cheese of your choice,
• 1 cup reserved pasta water
• 1 cup fresh spinach
• 10/15 cherry tomatoes, sliced in half
Method:
1) Cook the pasta
Cook rigatoni according to package instructions. Reserve 1 cup pasta water, then drain and set aside.
2) Season the chicken
Season chicken with salt, pepper, garlic powder, smoked paprika, Italian seasoning, and oil. Mix well.
3) Cook the chicken
Heat oil in a pan over medium heat. Cook chicken for 12–15 minutes, flipping halfway, until fully cooked. Remove, rest, then slice.
4) Make the sauce
In the same pan, add butter and oil over medium heat. Once melted, add garlic and sauté 30–60 seconds until fragrant (don’t brown it).
5) Add tomatoes & seasoning
Add cherry tomatoes and cook 1–2 minutes until slightly soft.
Stir in salt, smoked paprika, garlic powder, black pepper, Italian seasoning, and red chili flakes.
6) Add cream
Lower heat to medium-low. Pour in heavy cream and stir until smooth.
7) Add cheese
Stir in your cheese of choice until melted and creamy.
Add pasta water as needed to loosen the sauce.
8) Finish
Add spinach and cook 1 minute until wilted.
Add sliced chicken and pasta. Toss until everything is coated.
9) Serve
Garnish with extra cheese and parsley if using. Serve warm and enjoy ☺️
