I’ve been meaning to get some puffed quinoa for AGES as it’s such a fab ingredient to add protein and fibre into desserts, and the crunch factor is just 🤌🏼 Here’s how 👩‍🍳 🔹3/4 cup puffed quinoa 🔹1/3 cup peanut butter 🔹1 cup chocolate chips ▪️Line a muffin tin with paper liners. Melt chocolate chips with in a microwave-safe bowl, stirring until smooth. ▪️ pour in puffed quinoa and stir to combine ▪️spoon a heaped tablespoon into each liner. With just 2 WeightWatchers points for 5 crackers, they’re a diet-friendly option you’ll love 🥳 💡 Quinoa is a gluten-free whole grain and a complete protein, rich in fibre, helping you stay full longer while supporting your weight loss journey. Ingredients (makes about 25 crackers): * ½ cup uncooked quinoa (100g) * 3 chopped sun-dried tomatoes * 2 tbsp tomato paste * 2 tbsp ground flaxseed * ½ tsp paprika, oregano, or both * 1 tbsp extra virgin olive oil * 3 tbsp water (40ml) * Optional: rosemary and salt flakes for garnish Method: 1. Rinse the quinoa and cook it in 1 cup of water (250ml). Let it simmer for 15-20 minutes until the water is absorbed. 2. Allow the quinoa to cool, then drain well. Make the flax egg by mixing the ground flaxseed and water and wait a few minutes so it turns into a jelly consistency. Blend the quinoa with the sun-dried tomatoes, tomato paste, flaxseed egg, olive oil, and spices until the mixture holds together. 3. Line a baking tray with parchment paper. Roll out the mixture as thin as possible for extra crispy crackers. 4. Top with rosemary or seeds, and sprinkle with coarse salt if desired. 5. Bake at 350°F (160°C) for 30 minutes, then cut into squares and spread them out on the tray. 6. Bake for another 10 minutes at 300°F (150°C), flip the crackers, and bake for another 10 minutes. 7. Let the crackers cool completely. Enjoy them on their own or with your favorite dip. I paired mine with a homemade dip of cottage cheese, basil, and artichokes—so delicious! Wasser in einem Topf aufkochen, salzen und die Quinoa ca. 15 Minuten köcheln lassen. Abgießen und abkühlen lassen. Fan de la quinoa no puedo decir que lo sea mucho, peeeero si me gusta usarla para crear recetas como estas albóndigas con calabacín, feta, tomates secos y menta 🙋🏼‍♀️🌱🧆 Un plato súper completo que si, además, lo sirves, como hice yo, sobre una base cremosa de tahini (que mezclé exclusivamente con agua y zumo de limón) pues seré tu fan. Te gusta la quinoa o naahhh?! 🙃 Albóndigas de quinoa, calabacín y tomate seco Receta en Biotiful App 🩷 - quinoa - cebolla o chalota - aceite de oliva & sal - ajo - calabacín - tomates semi secos - albahaca y menta fresca - queso feta - copos de avena - huevos Limpia bien la quinoa y cocínala con un poco menos del doble de su agua. Lleva a ebullición, baja el fuego, tapa y cocina unos 12-14 minutos o hasta que esté cocida. Mientras, dora la cebolla picada en una sartén con un poquito de aceite de oliva y añade un poco de sal. Cocina a fuego medio unos 4 minutos. Añade los 2 dientes de ajo rallados y cocina 2 minutos. Añade el calabacín picado y cocina unos 10 minutos hasta que esté un poco dorado. Deja enfriar. En una procesadora de alimentos, o parecido, pon la quinoa cocida (400 g cocida), la mezcla de cebolla y calabacín, los tomates semi secos, la albahaca, el queso feta, pimienta recién molida, los copos de avena y los huevos. Tritura unos segundos, pero no te pases, queremos mantener tropezones. Deja enfriar la masa en nevera unos 20 minutos. Precalienta el horno a 200ºC y prepara una bandeja con papel de hornear. Forma albóndigas con las manos y coloca sobre la bandeja y añade un poco de aceite de oliva por encima. Hornea unos 20 minutos, dales la vuelta y hornea unos 10 minutos más.
