This pasta salad packed lunch is quick to prep and easily customizable to your dietary preferences👇🏽 Ingredients: ~ 1 cup chickpea pasta, cooked and then cooled under running cold water ~ handful of spinach, sliced ~ handful of cherry tomatoes, halved ~ 3-4 sundried tomatoes in brine, sliced ~ 1-2 tbsp of the sundried tomato brine ~ 1/2 an avocado, sliced ~ squeeze of lemon juice ~ grated parmesan cheese to taste ~ cracked pepper Yes it is gluten-free and vegetarian by nature (skip the cheese for vegan), but I absolutely love to add seared salmon or chicken too!! 250 g extra lean beef mince
1/4 cup soy sauce
1 tbsp brown sugar
1 tbsp sesame oil
1 tbsp rice wine vinegar
1 tsp grated ginger
1 clove garlic, minced
1/2 tbsp gochujang 3 large tortillas
200 g mozzarella, grated
1 spring onion, finely sliced
2 tsp chilli oil (optional) 1. Heat a pan over medium-high heat. Add beef mince and cook, breaking it up, until browned. 2. Add soy sauce, brown sugar, sesame oil, rice wine vinegar, ginger, garlic, and gochujang. Stir and simmer for 3–5 minutes until glossy and slightly sticky. Remove from heat. 3. Preheat oven to 180C. Line a baking tray with baking paper. 4. Lightly dip tortillas in water if stiff, then cut each tortilla in half. 5. Spoon beef mixture into the centre of each tortilla half. Top with mozzarella and fold into triangles. 6. Arrange on tray, sprinkle with a little extra mozzarella, and bake for 20–25 minutes until deeply golden and crisp. 7. Finish with spring onion and a drizzle of chilli oil before serving. #easydinner #tortilla #koreanbeef

Chicken & Vegetable Pesto Rice Bake Here’s what I used but you can literally use any veggies that need using up. I also used sun-dried tomato pesto as I was out of normal pesto but either is fine! Shoutout to @adamhoad_coaching for the inspo - one of my favourite follows of this year ✨ Ingredients 500g diced chicken breast 200g uncooked rice 500ml chicken stock 80g pesto 2 tbsp Greek yoghurt Handful of tomatoes 1/2 a head of broccoli florets 1 bell pepper (chopped) 60g cheddar cheese 30g Parmesan cheese Method Preheat oven to 200c Add all of the ingredients (aside from the cheese) to a large baking dish. Mix well and sprinkle the cheese evenly on top. Cover loosely with tin foil and bake in the oven for 45 minutes. Remove the tin foil and bake for a further 15 minutes. Allow to cool slightly then serve. #easymeals #mealprep #quickmeals #familymeals #easyrecipeideas

My most popular recipe from 2022 (and 2021) is this Crispy Chickpea Quinoa Bowl with Lemon Honey Tahini 💚 So glad you all love this one as much as I do! Save and try it out, you will love it 🤠 #dEATS - quinoa, roasted broccoli, lemon pepper chicken, roasted crispy chickpeas, and the LEMON HONEY TAHINI DRESSING!!! + avocado + lemon wedge Directions: 1. Prepare quinoa according to package 2. Preheat oven to 425F. Drain and rinse chickpeas, spread them on a baking sheet. Spray chickpeas with cooking spray or drizzle them in olive oil. Sprinkle sea salt, black pepper, and paprika (or chile powder) on them for the seasoning. Bake for 15 min and then check on them. Put them in for 7 more minutes or until crispy. 3. Roast your broccoli drizzled with olive oil and sea salt/garlic salt at 400F for 25 minutes 4. Sauté one diced chicken breast in olive oil and used sea salt, black pepper, and lemon pepper seasoning until fully cooked (can air fry your chicken too) 5. For the dressing - mix 2 tbs tahini with 3-4 tbs water and a tbs honey with 1/4 of a lemon squeezed. Mix together and then taste to see if it needs more honey or more lemon (depends on your taste). Add more water to thin it out if it’s too thick and add more tahini if it is too thin! some simple midweek inspo in the form of my current hyper fixation meal of rice, veg and fish. Basic, I know, but satiating! I’m always conscious about the amount of veg I consume in a week and on top of that try to keep it as diverse as possible - feed your gut all sorts to keep it healthy! This kind of a meal is perfect for that cause you really can load up on allllll the different veg! Ingredients for the sauce: 1 inch piece of ginger 1 garlic clove 1/2 a red chilli - or to taste small pinch of brown sugar small pinch of MSG 1-2 tbsp. soy sauce 1/2 tsp rice wine vinegar 1 tbsp. sesame oil the rest: 2 trout fillets 200g short grain rice 1 leek 2 garlic cloves handful of tender stem broccoli handful of green beans 1 pak choy stem handful of frozen peas handful of frozen edamame fresh chilli, crispy fried onions and spring onion to serve Method: Rinse your rice and put it on to boil. Mince the garlic and ginger into a bowl, finely dice the chilli and add this in too. Pour in the rest of the ingredients and mix well. Taste for seasoning and then pop the trout in to soak. Cut all the vegetables up into your preferred size, slice the garlic. Sauté the veg for 5-7 minutes and then add the garlic. Get a separate pan hot and pop the trout in skin side down and cook for 5 minutes on medium heat. Flip and cook for another 30 seconds. Remove the fish and pour the remaining marinade into the pan and reduce for a few minutes. Serve the rice in a bowl with the veg and trout on top, drizzle over the marinade. Garnish with crispy onions, chilli and spring onion!
