Son-Mat (hand-taste) Dos personas que siguen una receta de cocina jamás les saldrá igual. Hace muchos muchos años tomé un curso de fermentados y me acuerdo que perfecto que a una le salió muchísima espuma de la col, a otros mucha agua, a mi “normal.” Todos teníamos dos ingredientes: col morada y sal. En esa época vivía por el Ángel de la Independencia y en esa zona hay muchísimos restaurantes y tiendas coreanas y en algún flyer leí la palabra “son-mat” y su traducción al inglés como hand taste, o sea sabor de la mano literal. Me hizo total sentido a lo que acababa de ver al hacer el chucrut. Somos una gran microbiota y la piel no es la excepción y justo “son-mat” hace referencia al impacto que tiene la micro flora de las manos en el sabor de los alimentos que preparamos. Y yo la agregaría también que en el entendido de que todo es energía eso le imprimimos a cada cosa que hacemos o preparamos para comer. Típico que cocinas enojada y te sale cruda la masa (ya me pasó). No sé ustedes porque yo perfecto puedo reconocer si en los restaurantes a donde voy hay un nuevo chef porque la comida sabe diferente o si mi mamá compró comida hecha (aunque me dijo que la hizo ella). ¿Les pasa igual? Estas vacaciones le prometí a Emiliano que íbamos a cocinar más, al menos una receta diaria de sus recetarios 😅 y he aquí una de ellas versión más healthy. Pan de masa madre, los frutos rojos macerados con jugo de limón y 1/2 taza de azúcar de coco (no 2 tazas de azúcar regular), ghee, queso Brie y 🤗
