BEST MEAL PREP RECIPES OF ALL TIME Episode 1 Honey Teriyaki Chicken & Rice Bowls Per Serving (Makes 8) 515 Calories 40g Protein 65g Carbs 9g Fat — For the next few weeks, I’m going to be re-sharing my best and most popular meal prep recipes to help you get on track for the New Year: slow cooker meals, frozen burritos, and more 🌯🥘 Whether you’re just getting started with meal prepping for the first time, have tried and given up in the past, or just looking for meals to switch up your current routine - I’ve got you covered 🤝 As always, full recipes in caption! — Ingredients: 1360g (48oz) boneless skinless chicken thighs 75g (5 Tbsp) soy sauce 30g (2 Tbsp) dark soy sauce 80g (4 Tbsp) honey 60g (4 Tbsp) mirin 30g (2 Tbsp) ginger paste 15g (1 Tbsp) garlic paste High: 4-5 hours OR Low: 5+ on low Corn Starch Slurry* (to thicken sauce): 3 Tbsp cornstarch 4 Tbsp cold water 480g (2.5 cups) short grain or sushi rice, dry weight Low-Cal Yum Yum Sauce: 100g (½ cup) low-fat mayo 100g (½ cup) 0% greek yogurt 75g (5 Tbsp) sriracha Salt, pepper, garlic powder to taste Milk (as needed for desired consistency) 2 stalks green onions, chopped — *Mix in a small bowl, add after chicken is done and let sit uncovered for 15-20 mins. Note: I added this in before cooking in the video, which you can do, but I recommend adding it at the end so you can better assess the need for thickening post-cooking (aka you can add more or less, depending on the amount of liquid present after slow cooking) - This is a recipe from my Slow Cooker Meal Prep Cookbook! 80+ indulgent meal prep recipes, just like this one. It hails from mainland Greece and the islands, with roots in Ottoman era cooking and traditional peasant kitchens where slow cooking in a clay pot, the giouvetsi pot, developed into the beloved comfort food classic it is today. Despite the tray oven bake is more common, I cook my giouvetsi in one large pot so it can be a one pot wonder, leaving for less clean up and a more streamline recipe. Creamy, Fall-Off-the-Bone Braised Beef Short Ribs 🍖🥘 📝 Description 🧾 Ingredients 2–3 lbs beef short ribs 2 tbsp olive oil 1 medium onion (chopped) 4 garlic cloves (minced) 1 cup beef broth 1 cup heavy cream 2 tbsp tomato paste 1 tsp paprika 1 tsp dried thyme 1 tsp rosemary Salt and black pepper (to taste) 1 tbsp butter Fresh parsley (for garnish) 👨‍🍳 Instructions Season the ribs Pat the short ribs dry and season generously with salt, pepper, and paprika. Sear the meat Heat olive oil in a large Dutch oven or deep skillet over medium-high heat. Sear the ribs on all sides until nicely browned (about 3–4 minutes per side). Remove and set aside. Cook the aromatics In the same pot, add butter, chopped onion, and garlic. Cook for about 3–4 minutes until fragrant and slightly soft. Build the sauce Stir in tomato paste, thyme, and rosemary. Add beef broth and scrape the bottom of the pot to release the browned bits. Braise the ribs Return the ribs to the pot. Cover and cook on low heat for 2–2.5 hours (or in a 160°C / 325°F oven) until the meat becomes tender. Make it creamy Stir in heavy cream during the last 10–15 minutes of cooking and let the sauce thicken slightly. Serve Garnish with fresh parsley and serve warm. 🍽️ Serving Suggestions Creamy mashed potatoes Buttered rice Roasted vegetables Crusty bread to soak up the sauce 🔄 Variations Garlic Parmesan Version: Add ¼ cup grated Parmesan cheese to the sauce. Washing removes excess sugars that cause uneven burning 🧄 Start garlic in cold oil. Bring to a boil, then reduce to medium low, or gentle bubbling. Never use olive oil 🥄 Stir constantly and don’t rush it. Slow cooking = even colour and flavour ✨ Remove just after the silver stage when about 50% of edges are golden. Do not fully caramelise in the pan because it keeps cooking after removing 🥣 Strain into a clean bowl. Keep the fragrant oil. Let garlic cool in the sieve ❄️ Store separately or add garlic back once fully cooled. This keeps it super crispy 🧄Seal tightly when cooled. Ingredients: ⬇️ POT ROAST: -bone-in 2.5-3 lbs -Safflower oil RUB SEASONING: -1 tsp McCormick onion powder -1 tsp McCormick garlic powder -1-2 tsp smoked paprika -1 tsp brown sugar -2 tsp Knorr’s chicken bouillon -1 tsp oregano -1 tsp Goya total seasoning -2 tsp black pepper -salt to taste STEW: -1 medium yellow onion sliced -4 celery sticks chopped -2-3 oz tomato paste -1 cup red wine Cabernet Sauvignon -64 oz HEB less-sodium beef broth -1-2 tsp Grace browning (optional) -1-2 tsp Better Than Bouillon roasted beef base -1 beefy Lipton’s onion soup packet -onion powder, garlic powder,salt, black pepper (adjust taste) -3-4 carrots chopped -yellow and red baby potatoes -2-3 bay leaves -2 stalks rosemary -few stalks sage -6-8 stalks thyme -1- 1 1/2 garlic bulb Once meat is finished slow cooking, remove meat and strain: -1-2 tbsp unsalted butter -attach slurry ( 2-3 tbsp starch + 1/2 cup water) -1-2 tbsp brown sugar -1-2 tsp Heinz worcestershire -1-2 talks thyme SHEPARDS PIE: FILLING: -safflower oil -1/2-1 cup carrot -1/2-1 cup peas -1-2 tsp tomato paste -pot roast shredded -1/2 cup broth from pot roast -1-2 tsp Worcestershire sauce -starch slurry (1/8 cup water + 1-2 tbsp starch) -1-2 tbsp butter -black pepper (to taste) -salt (to taste) -can add additional seasoning used in pot roast (to taste) MASHED POTATOES: -5-6 medium/large gold potatoes -1/8 cup heavy whipping cream -3 egg yolks -black pepper (to taste) -sea salt (to taste) -1 clove garlic minced TOPPINGS: -butter -chives -freshly grated Parmesan cheese
