Brioche blueberry pull apart bread 🫐✨ Ingredients Bread - 435g bread flour (3 cups + 2 tbsp) - 68g granulated sugar (1/3 cup) - 185g whole milk (3/4 cup) - 60g unsalted butter, softened (4 tbsp) - 7g yeast (2 1/4 tsp) - 2 large eggs - 1/2 tsp salt Blueberry compote - 300g blueberries (about 2 cups) - 95g granulated sugar (10 tbsp + 2 tsp) - 1 tbsp lemon juice - 12g cornstarch (cornstarch slurry) - 2 tbsp water (cornstarch slurry) Icing (didn’t measure) - Confectioners sugar - Melted butter - Whole milk - Splash of vanilla extract - Splash of lemon extract Instructions Filling - In a medium sauce pan on medium heat combine blueberries, sugar, and lemon juice. Stir until well combined and cook until bubbling. - Add cornstarch slurry and stir constantly until very thick. - Transfer into a heat safe bowl, cover with plastic wrap, and cool for 10 minutes on the counter then refrigerate for 30-40 minutes. Bread - In a bowl, combine warm milk and sugar. Sprinkle yeast over the top, stir lightly, and let sit 5–10 minutes until foamy. - Add eggs, sugar, and mix again until well combined. - Add flour to mixture. Mix until a rough dough forms. - Begin kneading. Once the dough starts to come together, gradually add the softened butter (1 tbsp at a time), kneading until fully incorporated before adding more. - Continue kneading 8–10 minutes by hand or 5–6 minutes in a stand mixer, until smooth, elastic, and slightly tacky. - Transfer dough to a lightly greased bowl, cover, and let rise 1–1½ hours, or until doubled in size. - Punch down dough and roll into a rectangle about 12x18 inches - Spread filling evenly across the surface - Cut into strips, then stack and cut again to fit upright into a greased loaf pan (1/2 pound loaf pan) - Cover loosely and let rise 30–40 minutes, until puffy. - Bake at 350°F (175°C) for 35–40 minutes, tenting with foil if the top browns too quickly. - Top with icing and serve! • • • #recipe #baking #springrecipes #bakingideas #explore

I made this as a one-pot, and I can’t decide if that’s what makes it better or if it just makes it feel easier, but either way I love it. Everything cooks in the same pot, the sauce builds as the pasta simmers, and it comes together into something silky and glossy without a lot of effort. Mango salsa: 2-3 ripe honey (champagne) mangoes 1/4 cup finely chopped red onion 1/4 cup finely chopped cilantro 1 red Serrano pepper 1/2 lime, juiced 1/4 tsp salt & pepper 2 tbsp olive oil (I used @wearebrightland sumo orange) Avocado crema: 1 avocado 1 garlic clove 1 tbsp sour cream 2 tbsp plain yogurt 1/2 lime, juiced 1/2 jalapeno seeds removed 2 tbsp cilantro leaves S&P 1-2 tbsp water to blend Halloumi: 1 package of halloumi sliced 1/2 inch thick 2 tbsp hot honey 2 tbsp olive oil 1/2 tsp aleepo pepper Street tacos corn/flour Microgreens Lime wedges Mix ingredients for mango salsa in a bowl & set aside. Blend all ingredients for avocado crema until smooth & place in a small bowl. Slice halloumi & place in large dish & mix ingredients the hot honey, olive oil & aleepo pepper. Heat skillet over medium heat & add in halloumi. Cook on both sides until nicely browned lowering heat if it’s cooking too fast. Assemble avocado crema in the middle of each open flamed taco. Make my Springs Greens & Lemon Parmesan Pasta Salad to kick off the season 🥬🍋🥂 For the Pasta Salad: 14 ounces Fusilli or Fusilloni (I love @barillaus ) Extra-virgin olive oil, for drizzling 1 10-ounce bag frozen peas 2 cups chopped asparagus (cut into 1-inch pieces) 1 cup cubed Parmigiano Reggiano, provolone, or sharp white cheddar ¼ cup chopped fresh mint leaves, plus more for garish For the Vinaigrette: Zest of 1 lemon (about 2 teaspoons) Juice of 3 lemons (1/4 cup + 2 tbsp) 1 medium clove garlic, grated 1 cup Parmigiano Reggiano, finely grated 1 teaspoon kosher salt, plus more to taste ½ teaspoon freshly ground black pepper, plus more for garnish ½ cup plus 1 tablespoon extra-virgin olive oil Method 1. Bring a large pot of generously salted water to a boil and cook until the pasta is just under al dente (about 1 to 2 minutes less than box directions). DO NOT STRAIN! 2. Quickly add the asparagus and peas into the hot water with the pasta and continue to cook, just until the veggies become more vibrant and slightly tender, about 1 minute. Immediately strain the pasta and veggies using a colander and run cold water until cooled (see note below). Drizzle with 1 tablespoon of oil, gently toss, and set aside. 3. Make the vinaigrette: In a measuring cup or small mixing bowl, add the lemon zest, lemon juice, garlic, Parmigiano Reggiano, salt and pepper. Whisk in the olive oil and continue whisking until the dressing thickens. Taste and adjust for seasoning. 4. In a large mixing bowl, add the pasta and veggies, the cubed Parmigiano Reggiano, and mint leaves. Drizzle the dressing over top and gently toss to combine until thoroughly coated. 5. Garnish with additional mint and finish with freshly ground black pepper. Note: I will never usually tell you to rinse your pasta… In this case, we don’t want that starchy goodness because it causes sticking. This is why we run the pasta and veggies under cold water to shock them and keep them vibrant. If you want to add some extra greens, 1 cup of chopped arugula works great in this! . . . . . #pasta #salad #springrecipes #lemon

Recipe below: Ingredients: 15–20 mushrooms 4 cloves garlic 8 oz philadelphia cream cheese 1 cup Parmesan 1/4 cup Gruyère 1/4 cup sharp white cheddar 1/2 cup breadcrumbs (optional) 1/2 Tbsp butter 1 tsp salt 1 tsp black pepper 2 Tbsp fresh thyme (or 1 Tbsp dried) 1/2 Tbsp parsley Olive oil 1/2 tsp Worcestershire Clean mushrooms and remove stems. Finely mince stems and garlic. Heat a pan over medium-low with a drizzle of olive oil. Sauté mushroom stems until reduced by about half. Add butter, garlic, Worcestershire, and thyme and cook until fragrant. In a bowl mix cream cheese, Parmesan, Gruyère, cheddar, mushroom mixture, and parsley. Season with salt and pepper. Stir in breadcrumbs if using. Place mushroom caps in a buttered baking dish and fill with the mixture. Top with extra Parmesan or Gruyère if desired. Bake at 400°F for 18–20 minutes, then broil briefly to brown the tops. Optional: toast ¼ cup breadcrumbs with ½ Tbsp butter until golden and sprinkle over mushrooms before serving. #easterrecipes #springrecipes #appetizer
