The best & easiest Guiso de Pollo recipe (chicken stew) Hi friends!! I posted a video a few days ago of my son eating my mom’s chicken stew (Guiso de Pollo) and you guys wanted the recipe, so here it is!! Latin food is so comforting, and honestly really easy to cook! This came together in less than 40 minutes (including cutting all the vegetables) and was such a delicious dinner for a couple days! Guiso de Pollo Serving size: 6 people Ingredients - Avocado oil spray - 2 pounds of chicken drumsticks - 1 white onion, diced - 3 carrots, peeled and sliced - 5 green onions (just the white part) - 3 garlic cloves, minced - Seasonings to taste: salt, pepper, paprika and one packet of aji panca (found out most international supermarkets or on Amazon) - 3 recipe russet potatoes, peeled and sliced - 6 cups of water - Half a bag of frozen peas 1. In a large pot over medium high heat, sear the drumsticks until golden brown with a tablespoon of avocado oil. 2. Add in the garlic and onion and cook until translucent. 3. Add in the carrots and green onion, and cook until they start to char. 4. In all your seasonings to taste and lower the heat to medium. 5. Add the recipe potatoes and hot water, cover the pot and reduce to medium low. 6. Cook for 20 minutes and then add in the frozen peas. 7. Cook for an additional 10 minutes (total cook time should be about 30 minutes), and check the temperature of your chicken to make sure it’s fully cooked through. 8. Serve hot with white rice and enjoy! Add onions, jalapeño peppers and stir to combine. Sauté for 2 minutes. 5. Add tomatoes, bay leaves, thyme, oregano, bouillon and stir to combine. Sauté for 2 minute. 6. Add carrots and stir to combine. 7. Add water and stir to combine. Cover skillet and reduce heat to medium-low heat. Simmer for 15 to 20 minutes or until carrots are tender. 8. Let me give you a tip, make sure that sugar is BROWNN deeep flavor and deliciousness. Ingredients: 3 Pound Chicken Thighs Green Seasoning 1 Tbsp Salt 1 Tbsp Pepper 1/2 Tbsp Garlic Powder 1/2 Tbsp Garlic Powder 1 Tsp Turmeric 1 Tsp Paprika 1 Tsp Ground Geera 1 Tsp Ground Clove 1/2 Tsp Cinnamon 1/2 Cup Brow Sugar 1/4 Cup Ketchup 3 Tbsp Butter Thyme Oil Steps: 1. Cut, wash & season your chicken with green seasoning and spices listed. Mix well and set aside. 2. Heat up pot with a neutral oil and then add in brown sugar stir around until you get a deep brown color, add in ketchup and mix. Cook down sugar and ketchup for a few min then add in your chicken. 3. Cover and let natural water from chicken come out and dry down, then add water just below chicken, bring to boil and add in your red beans. Flavor layered all the way through, not just sitting on top 👩🏽‍🍳✨ 👉🏽 Full Recipe Below ⬇️ Ingredients 3–4 lbs chicken (legs, thighs, wings, breast mix) 2 tbsp oil 3-4 tbsp brown sugar Seasoning / Marinade: 1 tbsp jerk seasoning 2 tsp curry powder 1 tsp cardamom 1 tsp coriander 2 tsp adobo 1 packet sazón 1 tsp allspice 2 tsp paprika 2 tsp dried thyme (or 2 sprigs fresh) 1 tsp ground or fresh ginger 2 tbsp green seasoning 2 tsp onion powder 2 tsp garlic powder 2 tsp Tony’s seasoning 1–2 tbsp browning sauce Salt & pepper to taste 1 small onion, diced 1 bell pepper, diced 1 scotch bonnet pepper (whole or sliced) 3-4 cups chicken stock or water 1 bay leaf 2 sprigs fresh thyme Instructions 1. Season chicken with all marinade ingredients. Mix well and let sit at least 2 hours (overnight is best). 2. Heat oil in a heavy pot over medium heat.
