You can save time Prep in advance Use your quiet days to get organized Store multiple flavours It means you will always have cookies on hand for last minute orders and you can start prepping ahead of time when you have large orders or events coming up I do ALL my prep in advance so that they are weighed portioned and ready to go, with all different flavours so that all I need to do is pop them straight in the oven to bake for 14 mins and I have freshly baked cookies This method works will all my best flavours and my stuffed cookies too! Stuffed Nutella cookie tin🍪🌹 . Brown/ melted butter-113gm Brown sugar-110gm Vanilla Flour-165gm Baking powder-1/2tsp Baking soda-1/4 tsp Milk-30gm or more to adjust consistency Nutella . Procedure 1. ���In a bowl, mix together brown butter, brown sugar and vanilla until well combined. 2. ���Fold in the flour, baking powder, and baking soda. ( also add a pinch of salt if using unsalted butter) 3. ���Add milk to form a dough. 4. ���Form into 55-60gm of dough ball each. Add frozen dollops of Nutella in each dough ball. ( I added slightly more Nutella in the middle cookie to get a pool of Nutella in the middle. ) 5. Arrange the dough balls into your cookie tin. 6. ���Bake at 180C for 10-12 minutes. . The depth of flavor! I’m not trying to make the cheapest or most affordable cookie, I’m trying to make the BEST cookie and that comes at a cost. You don’t walk into a Ferrari dealership and get mad at the prices because you’re comparing them to Toyota prices. Both are cars but the experience is completely different. I had a customer walk in yesterday and jaw drop when he saw the price. Then turns to me and asks me why the cookies are so expensive. He also mentioned he drove by one day and saw a huge line going down the block. I think that alone should answer your question. If the product wasn’t good or worth the price tag I don’t think we’d have lines going around the block. Either give the cookies a try and see for yourself why I price them like that or don’t, but don’t question someone’s value. It’s a bit rude. As if my time and effort is not worth the price tag because it doesn’t fit your budget. I probably shouldn’t let these little things bother me, it’s just hard to ignore sometimes when you put your heart into something and all people want to do is question your value. Do me a favor and leave in the comments if you’ve tried my cookies and if it was worth it. Feel free to say they are too expensive if that’s how you feel, if it comes from someone who’s already tried them, that doesn’t bother me at all. I appreciate constructive criticism. It’s all love. How we went from doing everything by hand — to the moment we bought the machine. One of the hardest decisions we made was leaving our small bakery for a bigger space just so we could buy equipment. Hi, I’m Ela, and this is my bakery 🤍 We opened in August 2022 at Capitola Mall in Santa Cruz, California. For a long time, we did everything by hand — macarons, cookies, thousands of them every week. We grew. We got more wholesale accounts. And at some point we hit a wall: we couldn’t hire more people and we couldn’t buy machines — simply because there was no space. So the choice was: hire more people and add night shifts or move to a bigger place and invest in equipment. Honestly? I was exhausted. I was 9 month pregnant that time. Bakery work is physical. You’re on your feet all day, hands nonstop. Our hands were hurting — mine and my team’s. So we moved. Last December, the week before my due date. More space, more fridges, more freezers — and finally, this cookie machine. It measures the dough. It measures the filling. It fills the cookies for us. Yes, it was scary. The new space was more expensive than we planned.But one thing became very clear: 👉 you can’t scale with hands. And if you’re also at that point — making cookies, growing, tired of doing everything by hand — and you’re ready to expand and invest in this machine, feel free to DM us for information.
