Sage & Onion Chicken Balls This is your Sunday reminder that you don't need to spend hours cooking a roast dinner, you can just make these delicious little chicken balls! Sage & Onion stuffing, mixed with chicken mince and then baked in the oven. They could not be simpler. You can prep them ahead, they're really cheap to make and they taste incredible! Just have them with some roasties, my creamy cabbage & leek and a cheeky yorkshire pudding for a lovely, lazy Sunday roast The recipe's below, let me know what you think! A x Makes 20 balls 170g Sage and Onion Stuffing mix 450ml boiling water 500g chicken mince Olive oil Salt and ground black pepper Tip the stuffing mix into a bowl, pour over the boiling water and give it a good stir. Leave to rest for 15 minutes or until cool enough to handle. Add the chicken mince to the bowl, season with salt and pepper. Use your hands to combine the mince and stuffing, so it's thoroughly combined. Use an ice cream scoop to get a level scoop of the mixture (you can do this by hand if you prefer) Drizzle your hands in a little olive oil and roll the balls firmly in the palms of your hand. Place on a lined baking tray and repeat with the rest of the mixture. This will make around 20 balls. Add a little more oil to your hands after every few chicken ball rolls. Cheesy Autumn Vegetable Bake If you fancy something a little bit different for your Sunday roast this week...something veggie, something that's ridiculously comforting, you have got to try this! Roasted butternut squash and broccoli, cabbage and some buttery leeks, topped with a gooey, golden, mustardy cheese sauce. This is one of the best Sunday dinners I've had in a long time.... We had it with roasties and stuffing balls, but if you wanted to do this as a midweek dinner, it would be brilliant with chips or jacket potatoes. I have written up the recipe for this below and I would love to know if it's going on the list! A x Feeds 4 400g butternut squash peeled and cut into 2cm cubes 300g broccoli florets 2 leeks thickly sliced Oil for roasting 4 savoy cabbage leaves, cut into thick pieces (tough stem removed) 40g butter 50g flour 650ml milk 80g grated cheddar cheese (plus extra for topping) 1 tsp dijon mustard Heat the oven to 200C fan Place the butternut squash, broccoli florets and leeks on a baking tray. Drizzle them in oil and use your hands to ensure they're coated. Season with salt and pepper and bake in the oven for 10 minutes. Add the cabbage to the tray and coat it with a little more oil. Return to the oven for a further 5 minutes. Melt the butter in a large non-stick pan. Stir in the flour on the heat until combined and starting to bubble and turn pale. Slowly add the milk a little at a time. Stir continuously, bringing it to the boil each time until thick and lump free before adding more. When all the milk is used up, season with salt and pepper and stir in the grated cheese and dijon mustard. Tip the roasted veg into a baking dish. Pour over the cheese sauce and give it a little stir until everything is coated. Top with grated cheese and bake in the oven for 25-30 mins or until the cheese topping is golden brown. There’s little more satisfying than clearing out the freezer and cooking up a beautiful Roast Dinner with those forgotten frozen treasures. I save a lot of my toddlers half eaten fruit to roast with big joints of meat like this pork hand. Which by the way is a generous cut and often well priced. This whopper was £11.99 from the butchers and could easily feed 6 people. I served it with cider roast potatoes and savoy cabbage. The liquid gold gravy came from those beautiful frozen fruits and pork juices. Combine that with gooey cheese and ham hock, and you’ve got the ultimate comfort in a crust. 🧀 I only have Pies for you! Because let’s be honest, pie makes everything better, and if it has cheese too, then all is good, perfect for lunch today with salad and with friends. 1 head of a small cauliflower cut into florets Sea salt and black pepper For the sauce 20g butter 20g plain flour 3 twists of freshly grated nutmeg 250ml milk 60g cheddar finely grated 2 tsp Dijon mustard Salt and black pepper 100g of ham hock 2 sheets of puff pastry Egg for the egg wash 1. Preheat the oven to 200C/180C Fan/Gas 6. Put the cauliflower in an ovenproof dish and season with a little salt and pepper. Roast for 20 -30 minutes, or until tender and starting to brown. Give it a prod to test that it’s soft. 2. For the sauce: melt the butter in a saucepan, add the flour and cook for 1-2 minutes, or until a light golden colour. Gradually add the milk, stirring all the time until smooth, then cook over a gentle heat for 3-4 minutes, stirring until thickened. 3. Add nutmeg. Turn the heat down add the mustard and cheese. Taste and season. 4. Pour the sauce over the roasted cauliflower and mix through the ham hock and allow to cool completely. 5. Cut two rounds of puff pastry - I did a 23cm and 26cm and fill the smaller one with the cauliflower mix and egg wash the sides and pop the lid on and crimp. 6. Put back in the fridge for half an hour - and turn the oven on to 180°C fan. 7. Egg wash the outside and pop a hole in the top. 8. Cook for 30 mins until golden all over. Those who know, know.🤌🏼♥️ Growing up Italian meant long Sunday lunches and Italian music playing in the background while cooking. One of my favorites was Raffaella Carrà (okay… my parent’s favorite 😉). Because of them, I learned Italian music and how to cook. 👩🏻‍🍳 Cutlets were always a staple growing up: fried, or layered with sauce and mozzarella and finished in the oven. The perfect choice for feeding a big Italian family. Just pop them in the oven, and they’re always a hit. I now make mine with chicken, but you can use veal or your preferred choice of meat. Creamed Spinach & Shallots This is one of those recipes that makes every single dinner you have it with - better! Now that it's sausage and mash season I'm literally making this on repeat at the moment... It's honestly the creamiest, most moreish side...it's ridiculously easy to make AND you can even freeze it - you're really not going to believe how good this is! Have it with steak and chips, stick it on the side of a roast, have it in a toastie, or with sausages a big pile of mash and a puddle of gravy! I've written up the recipe for this below, let me know what you'd have this with! A x Feeds 4 as a side dish 200g shallots finely sliced lengthways 2 cloves garlic finely chopped A pinch of nutmeg 1/2 tsp ground black pepper 400g fresh spinach leaves 200ml double cream 70g finely grated mature cheddar Salt Heat a drizzle of oil in a large, deep, non-stick pan with a lid. Add the sliced shallots and fry on a medium heat for 7 minutes, stirring regularly. Stir in the garlic, nutmeg and black pepper. Fry for a further 2 minutes. Add the spinach and place the lid on the pan. You may need to cook the spinach down a little to make room to add more. Simmer for about 5 minutes, occasionally moving the top spinach to the bottom of the pan so it all wilts. When the spinach has wilted press it together at the bottom of the pan to squeeze out any excess moisture. Stir in the cream and grated cheese and season with salt. Gently heat through and serve #recipes #sundaylunch #sundayroast #goodfood #sausages #comfortfood #homemade #easydinner #familyfood #dinnerideas
