Wer nur wegen des Geldes in die Gastronomie geht, ist in der falschen Branche. Es gibt definitiv einfachere Wege, Geld zu verdienen. ABER: Wir sind ein Business. Und als Business dürfen und müssen wir auch Geld verdienen. Ohne Profit können wir uns unsere Werte und Ideale schlichtweg nicht leisten. Ein konkretes Beispiel aus meiner eigenen Erfahrung: Vor zweieinhalb Jahren haben wir einen neuen Standort in Heidelberg eröffnet. Voller Idealismus wollten wir unsere Produkte zum Mitnehmen in Mehrwegbehältnisse von Vytal anbieten. Super System, dachten wir. Die Realität: Nach einer Woche mussten wir es wieder einstellen. Kein einziger Gast war bereit, den Mehrweg zu gehen. Als junges Unternehmen ohne große Rücklage konnten wir uns diesen Idealismus schlichtweg nicht leisten. Die harte Wahrheit: Du brauchst Gewinn, damit deine Vision überhaupt funktioniert. Ohne profitable Basis bleiben deine besten Absichten nur schöne Theorie. Was denkst du darüber?
