✨This dish brings back so many memories from my childhood when my father spent hours preparing a lamb tagine with prunes- a dish full of sweet flavors and warm aromas (thanks to the addition of raisins, prunes, cinnamon, and nutmeg) that is traditionally served with bread on the side (however, eating tagine with couscous is my preferred way) ❇︎
🥕My version of vegetable tagine is inspired by both traditional vegetable tagines made throughout the Maghreb community and “Tfaya”- a garnish of caramelized onions and raisins that adds depth and sweetness to any moroccan dish it’s placed upon. I’m trying to be more plant-based at home, and so I added white beans for some protein (in place of typical proteins like lamb or chicken) and to inject a level of creaminess that blends with the juices from all the stewed veggies.🧅🍠🥒
