POValentine’s Day Series Part 4: Creamy Cajun Salmon Pasta Recipe👇:
This creamy Salmon recipe will guarantee a special Valentine’s Day!
Takes 30 minutes MAX and is absolutely delicious.
The only thing I will say is this is NOT Alfredo, nor did I ever claim it was.
I will claim that it is pretty awesome.
Recipe:
Ingredients
• 3 salmon fillets (about 6 oz each), skin on
• Kosher salt (for dry brine)
• Avocado oil
• Cajun seasoning (or any seasoning blend you like)
• Ghee or butter
• 12 oz penne pasta
• ½ lb broccoli, steamed and chopped
• ½ large white onion, diced
• 4 garlic cloves, minced
• Red pepper flakes, to taste
• 2 cups heavy cream
• ½ cup reserved pasta water
• 2 tbsp Cajun seasoning
• ¼ cup grated Parmesan, plus more for topping
• Fresh parsley, chopped (for garnish)
Instructions
1. Season salmon generously with salt and refrigerate uncovered overnight (or at least a few hours). Pat completely dry before cooking.
2. Boil penne in salted water until al dente. Reserve ½ cup pasta water, then drain. Steam broccoli until tender and chop into small pieces.
3. Rub salmon lightly with avocado oil and Cajun seasoning. Heat ghee and a splash of avocado oil in a skillet over medium high heat. Place salmon seasoned side down and sear until deeply golden. Flip, crisp the skin, then transfer to a 400°F oven for 5 to 10 minutes until cooked through. Remove and set aside.
4. In the same pan, sauté onion in the leftover fat until soft. Add garlic and red pepper flakes and cook 30 seconds.
5. Pour in heavy cream and reserved pasta water. Bring to a simmer and whisk until smooth.
6. Stir in broccoli and penne. Add Cajun seasoning and Parmesan. Toss until coated and thickened into a creamy sauce.
7. Nestle salmon pieces on top of the pasta and let steam in the sauce for 2 minutes.
8. Finish with parsley, red pepper flakes, and extra Parmesan. Serve hot.
Salmon just has a Valentines feel to it, right?
