For decades, authorities kept import duties deliberately low to control food inflation at the retail level. It worked on paper. But it quietly hollowed out something far more important. Cheap foreign oil flooded Indian markets. Palm oil. Chemically refined soybean oil. Industrial fats. Domestic oilseed farming collapsed quietly. Farmers stopped growing mustard, groundnut, sesame — because they simply could not compete with subsidised foreign imports. The result? India went from being largely self-sufficient in edible oils to importing nearly 60% of everything it consumes. These weren’t just trade decisions. They were public health decisions. And now the bill has arrived. With the rupee under pressure and the trade deficit widening, $19.5 billion leaving the country annually for something as basic as cooking oil is no longer sustainable. This was never a health crisis first. It is a supply crisis. An agricultural policy failure. A foreign exchange emergency. The government’s urgency around oil consumption isn’t a wellness campaign — it is damage control for thirty years of import dependency that gutted domestic oilseed production and left India dangerously exposed. The fix is long, structural, and agricultural. Revive domestic oilseed farming. Bring mustard, groundnut, and sesame back to scale. Rebuild what import dependency dismantled over three decades.
