I'm pretty sure all my Calgarian friends have told me about @shikimenya at some point. They have to point it out even if it's closed but we're driving by. It has a cult following of industry and locals guaranteeing them a lineup until he sells out, which is often before 3 PM (even though they close at 3 PM). Anyhow I finally made it here, and it was all that was promised.
Shiki Menya, founded by Alberta native Koki Aihara @mistakayhimself, is where tradition and innovation come together in delicious ways. Growing up in a family where his father owned a Japanese restaurant, Koki was destined to carry on the family legacy. Back in the day, having just ramen on the menu wasn't common, and it was challenging to survive in the Western market. Fortunately, times have changed, and ramen has gained immense popularity over the last decade.
Specializing in a luscious tonkatsu style pork broth ramen, typically preferred by North American palates and ideal for the colder Calgary weather, Shiki Menya stands out for its housemade nori noodles. These noodles are not only chewy but also vary in thickness to harmonize with his variations of lighter and richer broths. Koki's dedication to his craft has earned him his place on the map as Calgary's beloved and favourite ramen shop.
Note: I prefer the classic, but it's really personal preference. They're all excellent in their own ways. The chili goma ramen and kara miso black are also popular favourites for people who love flavour bombs.
