CAlemon crumble cake 🍋🍰
this cake is soooo perfect for this time of you - it’s yummy and fresh and just has that spring flavour to it! it would be perfect to bring to an easter brunch or for a dessert option - a crowd pleaser for sure 🫶🏼
cake batter:
3/4 cup unsalted butter, room temp
1 cup sugar
2 tbsp lemon zest
3 large eggs
1/4 cup fresh lemon juice
1.5 cups flour
1 tsp baking powder
1/2 tsp salt
1/4 cup milk
crumble topping:
1 cup flour
1/2 cup sugar
1/4 cup brown sugar
1 tbsp lemon zest
6 tbsp cold cubed butter
1. preheat your oven to 350 and prepare a cake pan
2. in a mixer, beat your butter, sugar and lemon zest until light and fluffy
3. add your eggs one at a time until mixed. the add your lemon juice
4. gradually add your dry ingredients (flour, baking powder + salt) while alternating with your milk until everything is just mixed
5. prepare your crumble by mixing your flour, sugar and lemon zest in a separate bowl and cut in your cold butter until it’s coarse in texture
6. pour your batter into your prepared pan and sprinkle your crumble overtop
7. bake for 40-45 mins. let cool for 10 mins in your pan before transferring to a wire rack.
8. garnish with fresh lemon and whipped cream!
