Serves: 4-8 Prep time: 12 minutes Sous vide time: 45 minutes Recipe Time: 57 minutes Recipe Temp: 117 F (47 C) Special tools: @AnovaCulinary's #AnovaPrecisionCookerPro Ingredients: ½ (2.5 Ib) side of salmon, pin bones removed 3 tablespoons maple syrup 2 tablespoons freshly grated horseradish Zest and juice of 1/2 lemon 1 tablespoon chopped fresh parsley 1 tablespoon chopped fresh dill 1 tablespoon chopped fresh chives 1 tablespoon kosher salt 1 teaspoon crushed black peppercorns Method: 1. Attach the Anova Precision Cooker to a vessel of water. Heat the water to 117°F (47°C). 2. Place the salmon into a large vacuum seal bag. 3. Whisk together the remaining ingredients in a medium bowl. Pour over the flesh of the salmon in the vacuum seal bag. 4. Seal the bag airtight and transfer to the water bath. Cook for 45 minutes. 5. Remove the salmon from the bag and place on a wire rack set on a sheet pan. 6. Heat a broiler to high with the rack in the closest position to the heating element. 7. Once the broiler is fully heated, transfer the salmon to the broiler and cook until a browned crust forms, about 4 minutes or until crispy. 8. Serve immediately. Ingredients: Mosaic Pork 1lb pork tenderloin 2t toasted fennel seeds 1t garlic powder 1t onion powder 1t Dried thyme 2tbl Dried parsley 1t fine salt 1/2t black pepper 1/4t chilli flakes 1 orange zest 7-8 pieces prosciutto Orange Chimichurri 1 bunch flat leaf parsley 5 sprigs thyme 1t chilli flakes 2 garlic cloves 1 shallot 1t salt 1/2t black pepper 1/4c red wine vinegar 3/4c olive oil 1 whole orange diced segments Directions: Finely chop parsley, thyme, garlic and shallots and transfer into a bowl. Add red wine vinegar, olive oil, orange salt and pepper. Stir until combined. Recipes and learnings from stage #11 at Waverly: If you are interested in culinary school, here is a breakdown I got from Chef Jesus: 1st semester: fundamentals and knife skills, doing recipes and scaling recipes (RCF) 2nd semester: butchery, fundamentals but in larger quantities, rotate cooking for other students to receive feedback Externship after second semester. They have a portal to connect you with chefs around the world. 3rd semester: around the world focus, garde manger and small bites, and a 5 week intensive study on another area (savory/pastry/wine/etc.) 4th semester: fine dining experience. Work in a restaurant run by students and learn everything from cooking, serving, bussing, bartending, hosting, etc. A few more chef secrets: Roast carrots at 350F for 15min with oil, salt and pepper Hot honey made by reducing honey and apple cider vinegar, then adding dried chili flakes Pork chops prep: cleaned (especially at the bone), sous vide at 60°C for 55min to cook just above med, then finished on grill during service Portioning cavatelli pasta: coat pasta in flour and freeze to portion without sticking. Once frozen, dust again with flour and portion quickly. They’ll defrost and become harder to work with Breakfast potatoes: confit in oil at 350F for 2.5 hours, cooled in walk-in, then batch fried. Toss with sherry vinegar, parm, parsley, and salt. Grilled chicken: season with oil, salt and pepper. Hello my Friends! Today I show you a great product for those who like sous vide cooking! 👩🏻‍🍳 This is the Anova vacuum sealer. It’s suitable for moist and marinate food like meat, fish and dry food like Rice, grains, etc... It’s easy to use, just Place the roll inside the chamber, shut the lid and press Seal. In this video I’m making chicken wings, I put them in the sachet with my favourite seasoning, then I just have to seal the sachet and cook them sous vide with my roner, from Anova as well. In the meantime, I have time to do anything else and when time is up, I just need to put the chiken wings on a hot barbeque plate. Cooking sous vide it’s a great way to save time, eat healthy and keep the food fresh.
