Anzac biscuits for ANZAC DAY 2025. Lest we forget. 🌹 ANZAC BISCUITS (Makes 16 to 18)   1 cup plain flour (150g, all-purpose flour) 1 cup rolled oats (100g) 1 cup desiccated coconut (80g) 3/4 cup (165g) white sugar, preferably caster / superfine 150g / 5oz unsalted butter 4 tbsp golden syrup (sub 1 tbsp light molasses OR treacle plus 3 tbsp honey) 1 tsp baking soda (bicarbonate soda)   DIRECTIONS 1. Mix flour, oats, coconut and sugar. 2. Melt butter with golden syrup over medium heat. Once it starts bubbling, add the baking soda. Stir to dissolve - it will foam! 3. Pour into flour mixture, mix until combined. 4. Scoop up 1 tbsp of mixture, roll into ball then flatten into a thinnish patty (they don’t spread much). For standard size you buy in packets at the supermarket, use 2 tsp of mixture. 5. Place on paper lined trays 2.5cm/1” apart. Bake 15 min at 180C/350F (160C fan) for crisp or until deep golden, or 12 min or until golden for chewy centres. 6. Cool 5 min on tray then transfer to cooling racks. They will be soft when warm but will crisp up when cooled. Crispy ones stay crispy for a week in an airtight container, after that they soften but still super tasty. Also can crisp up in oven – 5 min at same temp. #recipetineats #anzacbiscuits #Anzacday2025

Crisp and Chewy Anzac Biscuits! 💕 🌹 Disclaimer: in the video I call them cookies, but they are in fact biscuits! Apologies, English is not my first language and sometimes these subtitles escape me. Let’s just focus on how divine these biscuits are! Ingredients • 1 cup rolled oats • 1 cup plain flour • 1 cup desiccated coconut • ¾ cup brown sugar • 125g butter • 2 tbsp golden syrup • ½ tsp baking soda • 2 tbsp boiling water and small pinch of salt Method 1. Preheat oven to 160°C (fan 140°C). Line a tray. 2. In a bowl, mix oats, flour, coconut, and sugar. 3. In a saucepan, melt butter + golden syrup. Add a small pinch of salt. 4. Dissolve baking soda in boiling water, then stir into the butter mix (it’ll foam). 5. Combine wet and dry ingredients. 6. Roll into balls, place on tray, and flatten slightly. 7. Bake for 10–12 minutes (this is key for chewiness). 8. Let them cool on the tray, they firm up as they set. #anzacday #anzacbiscuits #anzaccookies #lestweforget

I’ve always loved a classic Anzac biscuit — crispy, chewy, and made to last. No surprise they were sent to our soldiers as a little comfort from home. This year, I’ve sandwiched mine with some good quality vanilla ice cream for a simple, sweet twist. ANZAC biscuits ice-cream sandwich Makes 10 1 litre good quality vanilla ice-cream ANZAC biscuits  100 g rolled oats 100 g plain flour 70 g castor sugar 50 g desiccated coconut 5 g bicarbonate soda 25 ml water 125 g butter, melted 20 g golden syrup Method Preheat the oven to 150°C. Line a baking tray with greaseproof paper. To make the ANZAC biscuits, in a bowl, mix the rolled oats, plain flour, caster sugar and coconut together. In a separate dish, mix the water and bicarbonate soda together, then add to the dry mix. Stir in the melted butter and golden syrup then mix until combined. Divide the mix into 20 even portions, approximately. 1 tbsp of mixture per biscuit. Roll the biscuit dough into a ball and place it onto the baking tray. Lightly press the biscuits down gently to flatten slightly. Bake in the preheated oven for 15- 20 minutes or until golden. Remove and then leave to cool. Once the biscuits are cooled, place one biscuit on a serving plate, top it with a scoop of vanilla ice cream, and then add another biscuit on top. Gently squeeze together and enjoy straight away.
