Easy palappam ❌❌No Repost❌❌ - Roasted Rice Flour/ Normal Rice flour 1 cup - Grated coconut 1/2 Cup - Soaked Rice flakes or cooked rice 1/4 cup - yeast 1/4 Tsp - Salt - sugar 1 Tbsp - Warm water 3/4 to 1 cup ( as required) Grind together roasted appam flour, grated coconut, soaked poha, yeast, salt, sugar, and warm water (Warm water helps speed up fermentation) • Blend into a smooth batter • Allow it to ferment for 1–2 hours (Mine took around 1.5 hours to rise nicely) • Heat an appam pan, pour a ladle of batter, and gently swirl the pan to spread it • Once bubbles start forming, cover with a lid and let it cook • Remove once done and serve hot with your favorite curry ✨ Tip: You can place the batter over a bowl of hot water to speed up fermentation

Homemade appams / hoppers! I’ve tried and tried this recipe, and finally got the flavor AND texture I wanted 🥹🥹🥹🥹. And I can’t gatekeep this tbh, so excited to share it with you! I served with a madras railway style coconut curry which was also SOOO gooood Recipe: Take 1 cup rice and soak it overnight or at least for 5-6 hours. Next day, take out the water and grind it into a smooth batter using 1/4 cup water, 3/4 cup grated fresh coconut and 1/2 cup COOKED rice. Why do we use cooked rice? It aids fermentation honestly and gives a smoother batter. Now adjust the consistency with a little more water if needed. Now you can do 2 things - 1. if you don’t want to add yeast, you can just add 1 tsp sugar and let this batter ferment overnight for at least 12-14 hours (which is where the cooked rice would help) and then use it. 2. Or you can add 3/4 tsp yeast to this along with 1 tsp sugar and let it ferment for 2-4 hours in a warm place. (Basically till it doubles in size) While fermentation, don’t add the salt, salt hinders fermentation. Also, if you’re using active dry yeast, then activate it first in a little warm water + sugar combo before adding to the batter. So once the batter is fermented, add 1 tbso ground sugar and salt to taste ( I like my appams slightly sweeter) Grease an appam pan, place the batter in the centre, swirl it around and cover and cook it on a low medium flame for 2 mins. In a separate bowl add urad dal and fenugreek. 🔥Wash it 2 times and soak for 4 hours. How to grind batter⁉️ 🔥To a grinder first add the soaked urad dal and fenugreek. 🔥Add 1/4 cup water gradually and grind the batter for 6-7 min. Appam with coconut milk and stew is one of my favourite. Making it at home is not only easy but so satisfying. I am sharing a fool-proof recipe to make soft and spongy appams. Let me warn you, they are quite addictive. 8 Steps to make a perfect Appam batter STEP 1: Wash 1 glass of idli rice three to four times and soak it in 2 glasses of water for 3-4 hours. STEP 2: Drain excess water and add the rice to the jar of a mixer. Add 1 glass of fresh coconut and grind the mixture to a smooth paste . Add 1/4 cup-1/2 cup water while grinding( adjust) STEP 3: Take 1 tbsp of the ground batter in a pan, and mix it with 1/2 cup water without any lumps. STEP 4: Place this mixture over low flame and keep stirring till you get a smooth porridge consistency and switch off. STEP 5: To this mixture, add 1.5 tsp sugar( you can adjust the amount of sugar as per taste) and 1 tsp salt ( preferably sea salt) and mix well. STEP 6: If the mixture is still hot, add 1 more tablespoon of batter and mix it along with the cooked batter . The mixture should not be too hot or cold, it should be luke warm. Now, add 1/4 tsp yeast and mix without any lumps. You can add 1/4 cup water and mix well. Alternate Method: You can add the cooked batter with salt, sugar, yeast in a mixer instead of mixing with hand. STEP 7: Pour this mixture into the ground batter, mix well with your hands. STEP 8 : Cover and rest for 6-8 hours or overnight. Your perfect appam batter is now ready!! Important Note: Appam batter will be slightly thinner than dosai batter. You can always make the first appam and check for the consistency. If it is too thick, add water to the batter and make the remaining appams. I am sure they will be loved by your family and friends. You can serve appams with coconut milk or stew of your choice. Simply divine ! Do try and share your feedback with me.
