Finished with crunchy cashews for the perfect texture. For 100 fakeaway recipes comment FAKEAWAY Serves 4 480 calories (with rice) 47g protein Ingredients: - 3-4 chicken breasts, cut into chunks - 2 tbsp dark soy sauce - 2 tbsp light soy sauce - 1-2 tbsp honey - 1 tbsp hoisin sauce - 1 tbsp rice vinegar - 1 onion, cut into chunks - 2 peppers, cut into chunks - 3 spring onions, chopped chunky - Pinch of pepper - Handful of cashews - 4 garlic cloves, minced - 1 tsp ginger purée (or fresh ginger) - 100ml chicken stock - 2 heaped tbsp cornflour (, to thicken) To serve: - 2 spring onions, chopped - 1 tbsp sesame seeds - 600g basmati rice, cooked Method: 1. Add all of the ingredients to your slow cooker and cook on HIGH for 3–4 hours or LOW for 7–8 hours. 2. Once cooked, stir through the cornflour to thicken the sauce, and add another handful of cashews for extra crunch, if you wish. I also add some fresh spring onions 3. Slow Cooker Honey Garlic Chicken (my busy-mom lifesaver) 🍯🍗 I’ll be honest… I don’t love cooking. But I do love recipes that make dinner happen while I’m driving my kids to all their after-school activities. This one takes 10 minutes to throw together and the slow cooker does the rest. My kids devour it every time. Ingredients: • 6–8 boneless skinless chicken thighs • ½ cup honey • ¼ cup low sodium soy sauce • 2 tbsp ketchup (or hoisin sauce) • 3–4 garlic cloves, minced • 1 tbsp rice vinegar (or apple cider vinegar) • 1 tsp sesame oil (optional) • ½ tsp black pepper Optional for thick sauce: • 1 tbsp cornstarch + 2 tbsp water Directions: 1️⃣ Whisk sauce ingredients together. 2️⃣ Place chicken in slow cooker and pour sauce over. 3️⃣ Cook 4–6 hrs on Low or 2–3 hrs on High. 4️⃣ Optional: mix cornstarch + water into sauce and cook 10–15 minutes to thicken. Serve over rice and sprinkle with green onions + sesame seeds. Save this for your next crazy busy weeknight. Slow Cooler Chicken Tikka Masala If you love recipes like this, check out my Healthy Slow Cooker eBook in my bio—over 50 exclusive never seen before high-protein healthy slow cooker recipes! 🔗 This is my lighter version of the Indian Classic Chicken Tikka Masala, my slow cooker version literally melts in your mouth and tastes delicious, half the calories of a normal takeout version this one truly is a must try, let’s go: Ingredients: Serves 4 (347 calories and 32.9g protein per serving) 650g chicken breast 1 large onion 1 red chilli (add more if you like the heat) 1 tbsp minced ginger 1 tbsp minced garlic 1 tbsp ground coriander 5 cardamon pods 1 tsp cumin 1 tsp tumeric 1 tsp sugar 1 tbsp tomato puree 400g chopped tomatoes 3 tbsp chicken tikka masala paste (I used @jamieolivers paste) 3 tbsp creme freshe 1-2 tbsp corriander for garnish Method: - Add all the ingredients to the slow cooker, season well give it a good mix then cook for 3 hours on high or 5-6 hours on low, 20 minutes before serving add the creme fresh and you’re ready to tuck in. - Serve with fluffy rice, naan bread and ice cold beer, enjoy. Slow Cooker Honey Soy Cashew Chicken 🤤 Ingredients (4/5 serves): ~ 650g chicken breasts, chopped ~ 2-3 tbsp light soy sauce ~ 2 tbsp dark soy sauce ~ 2 tbsp hoisin sauce ~ 1 tbsp oyster sauce ~ 25g honey ~1 tbsp rice vinegar ~ 2 tbsp minced garlic ~ 1 tsp ginger minced ginger ~ 150-200ml chicken stock ~ 20g cornflour mixed with 2 tbsp water ~ 1 onion ~ 2 peppers Method: 1. Add everything (except the cornflour and half of the cashews) into your slow cooker. 2. Cook on high heat for 3-4 hours or low for 6- 8 hours. 3. Once cooked, stir through the cornflour mixed with 2tbsp to thicken the sauce, (if you’re like me and love a strong flavour maybe add a tiny bit more soy sauce here) 4.
