Scoring doesn’t have to be fancy, but it’s one of my favorite parts of the process! Before we jump into the tips, today is sourdough Saturday! Every Saturday I answer baking questions in my stories so head over there 🌾 SCORING TIPS: 🥖 score cold dough. Either from the fridge or use the freezer for 30-60 minutes prior to scoring! 🥖change your blade frequently! I change mine roughly every 4 loaves depending on how intricate my scores are. 🥖shaping and fermentation make a huge difference in score so focus on nailing those! (I have tons of tips and troubleshooting for this in my sourdough guide!) 🥖go in with a plan! I use toothpicks to mark guides in the dusting flour before scoring. 🥖don’t stress too much about it. If your dough keeps tearing when you score it, chances are… you’re using too much blade. 😬 Save this tip for later so you don’t forget! You only need the top portion of your bread lame to get a clean, smooth cut. If you’re dragging the whole blade through the dough, it’s going to grab, stick, and tear instead of giving you that crisp, beautiful score.🤬 Small adjustment, big difference. Someone commented on a previous post that this loaf had a mohawk 😅 that’s a pretty ear for sure! I want you to keep in mind two things: 1. Getting an ear is not the goal. You can make perfectly delicious and beautiful bread without getting an ear. I personally find ears to be inconvenient, making the loaf difficult to cut. 2. I was out of blades for my favorite @wiremonkeyshop lame, so I used this kind of blade you see in my video, but having a proper lame helps score much more easily, so you can get an ear (or any design) consistently. Tipps für’s Scoring 🔪🍞 {English version in the comments} So gelingt dir ein schöner „Ear“ und ein kunstvolles Muster: ° Teig kalt verarbeiten: Nimm den Teig direkt aus dem Kühlschrank – so bleibt er stabil und lässt sich besser schneiden. ° Mit Mehl einstäuben: Die Oberfläche leicht mit Mehl (Reismehl) bestäuben, damit das Muster beim Backen schön sichtbar bleibt. ° Scharfe Klinge: Nutze eine scharfe Rasierklinge– stumpfe Messer reißen den Teig unsauber auf. ° Flache und tiefe Schnitte: – Feine, flache Schnitte für das Muster. – Ein tiefer Hauptschnitt, damit der Teig beim Backen kontrolliert aufreißt. ° Klinge leicht schräg halten (ca. 45°): So entsteht der typische „Ear“ – diese abstehende, knusprige Kruste. ° Direkt nach dem Einschneiden backen: Der Teig sollte nicht zu lange stehen – sofort ab in den heißen Ofen! ° Optional: Nachschnitt nach 6–7 Minuten Für einen noch perfekteren Hauptschnittschnitt (Expansion Score) kannst du nach 6-7 Minuten das Brot kurz aus dem Ofen holen und den Schnitt vorsichtig noch einmal nachschneiden. Let’s score some pretty loaves in 2026! Wheat stalk designs are endless, it’s the simplest way to score your loaves, yet so beautiful!! A few tips… 💡Use super fine Thai rice flour for dusting 💡Use a new blade on your lane and cut it as I did in the video 💡Make tiny but deep cuts close together 💡Bake 5 min then cut the expansion score 💡To avoid the dusting flour from coming off while baking, eliminate steam. If using Dutch oven, don’t cover, if open baking, don’t add water or ice for steam. Most importantly, your bulk fermentation has to be on point. If the loaf is under proofed or overproofed, it won’t hold shape while you are scoring. #sourdoughloaf #breadscoring #sourdoughscoring #breadart
