If you’re a weekend sourdough baker, here’s a simple flow that works: After baking (same day)… Feed your starter, let it rise for about an hour at room temp to get things moving, then pop it in the fridge. That short head start helps keep it strong before it chills. During the week… Let it rest in the fridge. No daily feedings required. If it’s a well-established starter, once a week is usually enough. If you see a little hooch on top, it’s just hungry — not ruined. The day before baking… Take it out of the fridge and give it a good feeding (1:3:3 is a safe bet). Let it rise at room temp until active and bubbly. If your kitchen runs cool, give it extra time. Baking day… Use it at peak, which is when it’s doubled, domed, and passes the float test. Don’t forget to feed what’s left before it goes back into the fridge. You don’t have to organize your life around your starter. Let it support your rhythm, not the other way around. Hosting him in my baking studio for three sold out workshops felt like a masterclass packed into one weekend. Having an MOF beside me was basically a private lesson and I learned so much just watching him move through the dough. We baked with the T65 from Moulins Charlevoix and the baguettes were on another level. Light crisp and full of flavour. The kind of bake that reminds you why technique and good flour matter so much. Sourdough Bread with all purpose flour 🌾 Recipe👇🏻 I often get comments saying it’s impossible to bake good sourdough without strong flour. So in this recipe I used 80% all-purpose flour with 11% protein - the cheapest one I could find in the supermarket (about $0.6/kg). As you can see, it’s absolutely possible to bake a beautiful, soft, well-aerated bread with a great crust using regular flour. Don’t be afraid to experiment and experience will show you that almost everything is possible 🥰 Ingredients: 280 g all-purpose flour (11% protein) 70 g whole wheat flour 245 g water 140 g sourdough starter 7 g salt PROCESS: Warm fermentation: 7 hours at 21–23°C (70–73°F) Cold fermentation: 16 hours in the fridge Preparation notes: 🫙 Feed your starter and let it reach its peak . You can feed it in the morning (1:1:1, 5–6 h before mixing) or in the evening (1:5:5). Method: ➡️ Mix water, starter, flour and salt until combined. Rest 1 hour. ➡️ Do 1 set of stretch & folds. Rest 1 hour. ➡️ Do 3 coil folds, with 1 hour rest between each. After the last fold, let the dough ferment 2–3 hours, until it increases in volume and bubbles appear on the surface. (If the dough feels weak, add one extra coil fold.) ➡️ Shape into a boule or batard, create surface tension, and place seam-side up in a floured basket. Cold proof overnight. ➡️ Baking: I bake either on a baking steel or in a Dutch oven. Open bake: Bake in preheated oven at 250°C (482°F) with steam for 20 min, then release steam and bake at 200°C (392°F) for 15–20 min until golden brown . Dutch oven: Bake 20 min in preheated Dutch oven covered at 250°C (482°F), then 15–20 min uncovered at 200°C (392°F). Let the bread cool completely and enjoy 🤍🥖 ‼️ If your kitchen temperature is different, fermentation time may vary. #sourdoughbread #sourdoughstarter #artisanbread
